pebbles sw food diary- get a grip!

hiya. so heres the picture of the pasta bake i mentioned a day ago.

it was really nice and plenty for leftovers.

yesterday (thursday) was a work day, and a green day. i took my usual muesli, yougurt with berries on top (1heb) and ate it in mid morning break.
i finished work at 2 so rushed home picked up the kids and threw a quick lunch down my neck before hauling them off to the shops. i had 2 scan bran (2 syns) cottage cheese piled ontop - cos believe me it needs something wet! topped with a lump of pickle (2syns) - oh yum i love cottage cheese and pickle. i grabbed a satsuma and off we went.

we had a few errands to run but then stopped off at poundland to buy the weight watchers £1 treats.
we got - salt and vinegar hoops
hot chilli tortillas
spicy tomato & basil balls
cheesey nachos
chocolate caramel bars
lemon& currant 2 pack biscuits
all 4 syns
and the ww 2pk naan bread (5syns)

i ate a packet of the tortilla chips (4syns) on the way home while the kids ate a mcdonalds.
for tea we had salmon fishcakes (1heb for salmon), leek cheese and potato pie (2heA), with peas and sweetcorn. then a ww yogurt.

so totals for the day; 2heb's, 2hea's, 8 syns. all in all a good day and 4 glasses of water consumed so its a bit better but not ideal, another 4 glasses needed.

weigh in yesterday and i didnt post it. so i stayed the same which i kinda expected for some reason- hadnt fallen off plan but i wasnt surprised as i had lost each week so far. bit miffed cos we all like a loss but not put off in anyway. on a very plus note, i can now fit in my old nurses uniform which wasnt even meeting in the front 5 weeks ago. :whistle:

friday- a day off work today to spend with the kids on their last day of hols. my besty friend was coming to see us and so i was up at 8am and rushing around tidying up , hoovering and dusting and running up those stairs:whacky068:
note to self - next time buy a bungalow!
all in all after mopping and running around like a fly with a blue rump - i easily did and hour and a half of exercise.

i missed out on breakfast completely then had a coffee (black with sweetener) when she arrived. we chatted and chatted and decided to take the kids to the local beefeater for lunch. she is on WW and had her 'eating out' book which luckily for her listed all the points for the entire menu. i settled for a a paprika chicken breast with side salad and changed the chips to a jacket. it arrived with a mound of coleslaw (thats not fat free mayo said i) i ate about a desertful and left the rest. so im calling it (2.5syns). the jacket had a side dish with half a pound of butter which i sent back, but the chicken and salad were free. (oh yes sorry forgot to mention -red day). my daughter had sausage mash peas and yorkshire which she said didnt taste right so i tried a mouthful of the yorkie and it was fine so i'm calling that (1.5).

kids all had a dessert of chocolate brownies with fudge sauce, chocolate ice cream and marshmallows all rounded off with chocolate , chocolate and more chocolate. we had a coffee:sigh::sigh: they didnt have any sweetener and id forgotten mine so i had to have 1 sugar (1syn)

we were still full from lunch when it got to dinner time so kids had a snack. i still had to cook for OH so i did chicken breast stuffed with a mixture of quark, chopped red chilli, parsley, garlic. then wrapped it around with a rasher of bacon and topped it with a slice of mozzarella. then baked in oven. i served it with gravy from bovril mix and carrots and cauliflower

i made 4 of them, he had 2 then i had one on its own a bit later. 1 left for his packed lunch tomorrow.

i realised that i hadnt had any hea's and only 1heb so i had 1 slice of toast with a slice of melted leerdammer cheese. the small piece of mozarella and the leerdammer would probably amount to 1 hea. i hadnt used it all up but couldnt manage anymore.

still got to fit in some fruit and syn total only 5 today.

just made some quiches too.
i tried cathiec receipe but couldnt get anymore quark so i stuck with cottage cheese this time. i used the usual recipe for the filling of 4 eggs and tub of cottage cheese whisked up. with 1 half i crumbled stilton into it with chopped broccoli and laid ham on the base then poured the mix on top to give me ham stilton and broccoli quiche.

then the remaining half i added flaked salmon fillet with broccoli. they are both yummy and have cut them up into pieces for tomorrows lunches.

Hi pebbles :) I love ur posts & ur doing amazing, am jealous of ur cooking skills and ability to try all the recipes. I'm poo at that and end up bored of the same things..!
hi kieragh, ahh thats so nice of you but im sure youre a fine cook.
what days do you do ? and if you need any tips or ideas for meals i'll help out no problem. been doing this a while now over the years and i have plenty to share.

im glad you like my diary , i do go on a bit but im glad it helps.

Im desperate to find a butchers that does these syn free sausages and meat. there doesnt seem to be any down here in surrey. have you tried them? was gonna order from joes sausages but its a big order to get the minimal order, not sure ive much room in my freezer too.

just had a cuppa with other half and we had an apple crumble slice from weight watchers for 3.5 syns and it was really quite nice, even nicer theyre £1 in poundland!!!:woohoo: really sweet and hit a spot.

I do EE, worked really well for me in the summer when I got to under 9st. I have about half a stone to lose, had been doing WW propoints since Christmas but it's bloody slow! Plus I find I'm hungrier and snack more.

I live in Northern Ireland and am v lucky that 3 butchers in my town do the syn free meat. The pork and leek sausages and the burgers are devine!

I'll keep up with ur posts for ideas and inspiration!!! Love the pics too :) xxx

well done on your slimming journey- wow thats great and only half a stone to go. i have friends on ww and they even have to count eggs!. i made a sw quiche for a friend and she cant have it on heer propoints thingy. god i couldnt cope with that. no sir eeeeeeeeee!

Hello Dee! I'm a nurse too but work nights all the time and it totally plays havoc with diets. I'm sooo sick of myself I couldn't begin to tell you and that's saying something cos i just luuvv to ramble!:rolleyes: I've put on even more weight than when i decided to do this a few months ago, the weight train just isn't stopping at my station these past few years! I refuse to join yet another slimming club so I liked the look of SW and found Minimims by accident and am addicted! Grateful for all and any help everyone! Thanks xx

Oh everlong its great to have you along and i'd love to be a slim buddy, stick with us and we'll help you along. its a tough old road but i gotta say i'm finding it easier this time and i reached my heaviest ever (apart from pregnancy) .

i have alot of tips so i'm gonna nip out with the kids then i'm going to sit down and list some on my diary for everyone and if it helps a few of us then its worth it.

i am addicted to minimins and honestly couldnt do it without the support. im on here 5 times a day at least, checking stuff out.

morning slimmers, (oh actually its afternoon, where has the morning gone)

sat on here til 2am this morning nattering about all sorts, so didnt get up until 8.55.
the kids were enjoying hot chocolate and cereal downstairs - you see they dont really need me! the little monkeys.
i say little, the eldest is almost 13 and youngest 8.

so we chatted , did some tidying up and then thought about going swimming- well we did THINK about it, thats a start isnt it? anyway the pouring rain made us shrink back in the door like tortoises.

we had some brunch. red day

2 slices ww wholemeal danish,(heb) 2 poached eggs, mushrooms and tomatoes and 2 rashers of bacon with a cup of black tea and sweetener.

really enjoyed it.
free insertion fees on ebay this weekend so we grabbed some stuff and listed that for an hour or so. then we sat and watched a film cuddled up on the sofa.

i have some sw quiches in the fridge and some butternut squash soup so if i get peckish which at the moment im not- i'll have that.
dinner tonight is still in the planning, we have 1 vote for doner kebab sw style, and the kids have voted for mixed grill, so we will wait and see a little nearer to tea time.

i'm on a water mission today. gotta have my 8 glasses. so glass number 1 is in motion . 7 to go.

i helped my son tidy his room - gosh what a feat that was, thought i'd never be released from the clutches of the black hole! anyway we found a tube of jelly beans so i had 6 - my son held me down and threatened to torture me if i didnt eat them. :whip:

ok - no he didnt but thats 2 syns (theyre 3 for 1 syn)
i had a small slice of quiche, and some salt and vinegar hula hoops - weight watchers ones (4 syns) gasping for a cuppa now.
 
evening all, hope you're enjoying your saturday night. OH came in and i was making tomato and courgette soup. so had a mug of that. (syn free)

tomato & courgette soup
6 tomatoes
1 onion, 1 courgette
tsp garlic granules,
salt and pepper
couple sprigs of thyme.
2 chicken stock cube, 1 pint water.

these were bits i had in the fridge and threw them in a pan to simmer. then blitz up in blender. dont forget to remove thyme stalks, and i left tom skins in but next time i'll remove them before blitzing.

then set to on making tea. OH has been craving a mixed grill so he won the vote.

ok so this was
2 ww sausages (0.5 syns each)
quorn burger (free) with 1 hea cheese
chicken breast with chilli and garlic granules (free)
grilled tomatoes
sw chips (1heb)
mushrooms and onions cooked in 100ml water and a tsp marmite then a tablespoon from packet sauce mix for mushrooms (1.5 syns).
cauliflower cheese with the creamiest sauce ever (1.5 syns plus 1 hea)

gosh so filling. its the best cauliflower cheese and i make this sauce for pasta too.

cauliflower cheese
1 cauliflower
1 tsp dijon mustard
1/2 pint veg stock
1oz flour
salt and pepper
4oz cheese grated

boil cauliflower for 7 mins til just tender
mix veg stock and flour together then heat in a saucepan until starts to thicken, add half the cheese stir until melted. remove from heat add mustard, salt and pepper.
drain cauliflower and pour over the sauce, then carefully stir until well coated, transfer to ovenproof dish. top with remaining grated cheese and pop into oven until melted.

serves 4, 1.5 syns for the flour, add 6 syns if not using cheese as hea.

snacks today pear, ham, banana.

so in total today
2 heb, 2 hea, so far 10 syns for the day.

will probably have half an options stirred into fromage frais later (1 syn) .

so 11 syns most likely.

all in all a good day.
fluids- 3 teas, 4 waters, 1 diet coke and not finished with the water yet.
exercise - housework only today will do something tomorrow .

hi there guys, im so sorry ive been missing for a few days, ive been so busy with long days at work, one kid off school sick and busy lunch dates - oh get me the social butterfly!

so if you'll allow me, id like to catch up and will keep updated more in future.

so i guess i'll start with sunday as we left it at saturday eve.

sunday
set to be a busy day as we were getting our new chickens today - yes i did say chickens. the ones who lay eggs and therefore avoid you paying £2.23 for half a dozen free range eggs- what is that about. so we had 4 up until a few weeks ago when the fox came and ripped the fence off the chook coup. i'll resist the temptation to say what i think for fear of upsetting anyone and causing a minimins revolt.

so the other half got up at 8am and set to finishing the alcatraz which we have been building. mr fox is gonna have to be some kickass bandit fox with a chainsaw and a bandana if he thinks he is going to have a chance at getting hold of them now.
red day- but turned into a green day as i seriously mucked up.

breakfast
we had porridge and fromage frais with berries. HEB

lunch
2 rashers of bacon (4) with 2 slices ww wholemeal danish bread (5) tom sauce (1) mug of homemade tomatoe soup. apple and pear and fromage frais.

dinner
i had been slo cooking the lamb and mint meatballs in sweet and spicy sauce, all day and it smelt lovely. i put some rice in the rice cooker to boil and was counting this as a b on a red day. but i was having a dumb moment, cos rice is no longer a b choice on red - der i was so living in the past and just did it by way of habit. so i changed it to a green day and counted the lamb mince as a heb +1.5 syns and synned the bacon.

pudding was my take on banofffee pie. i took a weight watchers biscuit (2syns) and crumbled half of it into a glass then mixed a butterscotch sugar free angel delight (4.5 for a serving, 4 servings per pack) then sliced some banana on top and sprinkled with the remaining half a biscuit. it was 6.5 syns but it was lovely and made a real treat. i had made a syrup sponge and custard for the kids so it was nice to sit and eat something sweet and nice rather than a coffee or a muller.

so total for the day, 2 heb's, 2 hea's for milk with porridge and milk with angel delight.
syns 18. and a lesson learnt.
on a plus note, we have 5 beautiful girls in a sparkling new house who are settling in nicely.
 
monday
a busy day ahead again, as working 2 jobs today.
did the school run then went to my first job as midwife at the hospital from 930 until 1300. i took my breakfast with me and ate it when i could which i think was about 1130 - rubbish i know but thats the nature of the job.
breakfast
heb of muesli with low fat yogurt and mixed fruit berries. - i love this, by the time i get to eat it the yogurt has soaked into the cereal and its yummy.

finished at 1pm and headed of to the gp surgery for my next job which started at 2, until 6pm.
got there at 145 so ate my lunch i had packed.
lunch
laughing cow cheese extra light triangle (1.0), and tomato sandwich with ww danish wholemeal bread. HEB.
packet of ww crisp snacks tortilla ones (4). aldi cereal bar (3) apple pear and a satsuma.

hadnt decided which day to be on , hence the cheese sandwich , so by the time i got home i decided to go for green. tea was left over sw quiche, left over leek potato and cheese pie and a jacket with beans. lovely. really enjoyed it.

felt a bit rough so snuck off to bed early.

tuesday
woke up feeling like something had run over my head, my daughter was full of a cold and so she stayed off school. :sick:
we sat under the duvet until after 9 and felt very naughty! eventually decided we ought to get up and we moved to the sofa - with the duvet for moral support.
neither of us could face breakfast so we had a cup of tea.:coffee:
after some paracetamol and a dose of calpol, we were feeling better and a friend rang to invite me to coffee in the local coffee shop, well it would be rude not to, so i wrapped missy snuffle nose up and off we went. well she recovered rapidly enough to down, sausage egg bacon beans and a can of drink. i settled for 2 poached eggs on non buttered toast.(heb) and it was lovely because someone else had made me breakfast!

we talked and walked and eventually made our way home. i wasnt feeling up to much in the way of lunch so had some couscous and beetroot and some chunks of feta cheese (hea)

i was due to work in the family planning clinic that evening for 2 hrs so decided to get dinner in the making. i saw a recipe for chicken bhuna in a magazine and had all the ingredients ready. it was chicken breasts, a heap of spices, juice of a lemon, mixed peppers, peas and 11oz of spring greens!
yes 11oz! i know 11oz! anyway after filling the scales bowl with cabbage which only amounted to 5oz, i decided to call it a day as i couldnt imagine it would need a whole bag of greens. the picture certainly didnt reflect that and where was the sauce? lemon juice couldnt be it! i read and re-read the recipe but it was right. so i bunged it all in a casserole dish and left it for 30 mins as stated.

well, well, WELL. building up to this....... drum roll..................
it was bloody awful!

it resembled cabbage soup more than chicken curry. there was so much spring greens in it, it tasted rank. and i only put half the recipe!!!
the actual spices were nice and had they of been in a thicker sauce without the veg, would probably have tasted nice. but my oh my, it wasnt good, the chicken was really dry. would love to know if anyone else had tried it.

well chicken bhuna- chicken boo- er! wont be doing that again, what a waste of 4 chicken breasts.

felt so disheartened that i tried the tofu chocolate pudding- oh my god it never got out of the food processor and into a bowl it went straight into my mouth.
i couldnt get the box of silken tofu anywhere, so i got the cauldron make which is in the chiller.
it worked fine and i mixed some with mint options- died and gone to heaven!
some with the hazelnut options - OH's favourite and the rest with cocoa. mmmmm
will be doing this again and only 2 syns for the options or cocoa whichever u use.

for those of you who have led a sheltered sw life - here is what you do to get a chocolate mousse chocfix

tofu chocolate pudding
and dont be put off by the tofu - it works i promise.
so 1 box of silken tofu which is usually found near tins of lentils beans etc or if you cant get it, try it with the chilled version.
mix it with 2 teaspoons of cocoa powder or options and 2 teaspoons of sweetner. then mix with a blender to get a really silky smooth finish. must be blended or its not right.

there are lots of threads on here about the pudding and the only syns are what you add to the tofu. some have added orange essence to get a terrys choc orange fix, so if you like it, its worth a search to see what else you can do with it. there is also a peanut butter tart on here which i like the sound of too. so i may make that this weekend.
