GARLIC CHICKEN LASAGNE

SERVES 2

200g chicken breast
50g mushrooms
1 tsp Bovril chicken
1 onion
3 garlic cloves crushed
1 tsp oregano
S/ p
1 tin chopped tomatoes
Pack cheese sauce (4 syns per pack)
6 lasagne sheets
Cheese allowance





Fry the onions, garlic in frylight, add the chicken and oregano . Once cooked add tomato, tomato purée, chicken Bovril and season. Simmer while you make the packet cheese sauce . Layer the lasagne sheets , chicken mix and cheese sauce as usual finishing with cheese then add hea allowance of grated cheese on top and bake for 30 min.

SWEETCORN SOUP (kwise recipe)
-----------------------------------------

SYN FREE (GREEN OR EE DAY)
Serves 4

Ingredients
1 Onion peeled & diced
1 large Potatoe, peeled & cubed
1 x 12oz tin of Sweetcorn (the large one)
1.5 Pints Chicken Stock (1 cube and 1 stockpot chicken flavour)
Salt & Pepper

Place ingredients into a large saucepan & bring to the boil.
Simmer for 20-30 minutes
Liquidise and serve

PEBBLES MOUSSAKA
---------------------------

Serves 2 large portions or 3 medium to accompany chips and salad

1 pack lamb mince
1 carton passata
1/2 courgette chopped
1 stick celery chopped
1/2 leek chopped
2 cloves garlic chopped
1 veg stock cube / stockpot
1 tbsp tomato purée
1 aubergine thinly sliced
1 tsp each of sage, thyme and Italian herbs
1 small red onion chopped
40g lighter cheese grated

Chop veg and frylight a pan, cook courgette, onion, leek, celery until softened.
Add mince and brown
Add passata, Tom purée garlic and herbs , stock cube and a little water if required.
Allow to simmer gently.
Meanwhile frylight the pan again and add slices of Aubergine and brown gently.
When cooked, place slices of Aubergine into an ovenproof dish , then layer lamb mix and aubergine slices until all used up.
Sprinkle grated cheese on and store in fridge until ready to cook. Then cook on gas 7 for 25 mins

SYN FREE BBQ SAUCE
- 1 onion
8fl oz passata
1 tsp mild chilli powder
3 tbsp sweetener
4 tbsp balsamic vinegar
1 tbsp Worcestershire sauce
1/2 tsp mustard powder
Salt & pepper

Sauté the chopped onion and add chilli, fry until soft, add other ingredients and simmer for 10 mins then blitz with a blender if you wish or leave as it is.
Serve hot or cold and is freezer friendly.

FOR NEW YORK CHCKEN
I pop my chicken breast into oven for about 8-10 mins then add the slice of bacon over it and a tbsp of sauce, then return to oven for 10 mins then I add more sauce and finally after a few more mins I add 40g reduced cheese and pop back into oven to melt, its gorgeous .

PULLED PORK
-------------------

1.5kg boneless pork shoulder. ( I used a 400g pork fillet from asda for £3.40 to try it out so now I'd use a bigger joint)
1 tbsp red chilli flakes
1 tbsp mustard powder
2 tbsp white wine vinegar
Salt & pepper
250ml chicken stock
2 onions sliced
4 garlic cloves finely sliced

Preheat oven to gas 3
Place pork in a roasting dish.
Mix chilli, mustard salt and pepper and rub into meat
Mix vinegar and stock and pour over pork.
Scatter garlic and onion over the top
Cover with a piece of baking paper
Cover dish with foil
Bake for 2hr 30
Uncover and bake for another 45 mins

When cooked, using forks pull the pork into shreds.
Serve with syn free BBQ sauce, coleslaw, a bread roll, sw chips

RED PEPPER, TOMATO, CHILLI & CHICKEN SOUP - ( recipe from mrs Wilsoncroft)
------------------------------------------------------------
Tin of chopped tomatoes
One red pepper
One red chilli or chill flakes
1 piece of chicken
1 chicken Oxo cube
150ml water
1 tbsp sweet chilli sauce ( need to syn this)


Put everything in a pan and simmer for 20 minutes.
Add salt and pepper for extra flavour, blitz or leave chunky .

CHEESY MUSTARD POTATOES
--------------------------------------
1 jacket potato
1 egg yolk
1 tsp mustard powder
30g cheese ( grated)

Preheat oven to gas 6
Spray a potato with fry light and rub in, then roll in salt Cut a big cross in the centre and bake for 1 hour
Mix the egg yolk with the mustard powder and cheese.
When cooked, carefully prise potato open a little and scrape it out into cheese mix.
Stir it thoroughly and carefully scoop back into potato skin
Bake for a further 10 mins to brown

PETES CHICKEN & PEPPER CURRY WITH CAULIFLOWER RICE.
----------------------------------------------------------------------------
Serves 2

Ingredients
1 Red Onion, finely sliced (s) (sff)
1 tsp. Cumin
1 tsp. Cinnamon
1 tbsp. Sweetener
1 tbsp. Cornflower (3.5syns/2= 1.75 per person)
2 Red peppers, chopped into small pieces (s) (sff)
2 tbsp. Light soy sauce
2 tbsp. Tomato puree
2 tbsp. Red wine vinegar
2 tbsp. Madras curry powder
2.5cm Cube of ginger, grated or tsp lazy ginger
3 Spring onions, chopped (s) (sff)
4 Tomatoes, chopped (s) (sff)
200mL Chicken stock
2 large chicken breasts cubed (s) (ff)

Method
In a bowl, mix together the stock, soy sauce, tomato puree, vinegar, sweetener, madras curry powder, cumin and coriander & cornflower, set aside.
In a frying pan sprayed with frylight, cook the chicken until white, set aside.
Cook the onion, peppers until soft then add the ginger, cook for 1-2 mins, add the chicken , tomatoes & stock, bring to a boil then reduce to a simmer for 10 mins or until the chicken is cooked & the sauce has thickened, sprinkled the chopped spring onions & serve on a bed of rice.


CAULIFLOWER RICE
-------------------------

Serves 2-3

1 cauliflower
1 onion, chopped
1 garlic clove crushed
Salt and pepper to taste
2 tbsp soy sauce

Frylight a pan and add garlic and onion , fry until soft

Meanwhile put cauliflower into a food processor and chop until it turns to crumbs.
Add to pan with tbsp soy sauce , keep stirring until browned then add salt and pepper and more soy sauce to taste. Serve .

CHORIZO FRITTATA
------------------------

40g chorizo chopped
1 chopped onion
1/2 red pepper chopped
2 rashers bacon, chopped
5 mushrooms sliced
8 eggs
60g cheese grated (2heas for whole quiche thus 1 hea for half)



Fry chorizo in pan, After 5 mins add chopped onion, red pepper, bacon and after 3 mins add mushrooms .
Beat eggs with a fork, add salt & pepper. pour into pan.
Add cheese and Mix , cook for a few mins then add to grill.
Once browned on top, take out and leave to cool .

FROZEN CHOCCY SWEETIES
-----------------------------------

1 pack white choc options
Muller light yogurt of choice, or similar ( I used a tesco equivalent)
1tbsp sweetener.

Mix ingredients together then add blobs onto a tray covered with baking paper. Freeze for 30 mins.

2 syns for the whole lot. X

SCAN BRAN CHOCOLATE & COFFEE CAKE - by another sw minimins'er.
-------------------------------------------------
5 Scan bran (HEXB or 5 Syns)
3 eggs
Sweetener 4 tbsp
1 tbsp cocoa powder (1 Syn)
1 tbsp golden syrup (2.5 Syns)
2 tbsp DE hazelnut coffee (can use any coffee you like)

1.. Soak scan bran in boiling water to soften it. Drain and mash.
2. Add all ingredients and mix well
3. Pour into a microwaveable dish and cook for 7 mins on high
4. ( I cooked it in the oven for 15 mins on gas 6)

3.5 Syns for whole cake if using scan bran as a HEXB, I'd used mine up so synned it was 8.5 for the whole cake , I cut it into quarters and had it warmed up for the other days at 2 syns a time. I have tried most scan bran recipes and not liked them but this was good, def my favourite, had a tiramisu kinda taste so that's my next venture to make it then build a tiramisu dessert.

MOROCCAN CHICKEN
---------------------------

1/2 tsp ginger
2 teaspoons paprika
1/2 tsp turmeric
2 garlic cloves
3 tbsp chopped coriander
1 1/2 tbsp lemon or lime juice
Salt and pepper
4 chicken breasts



Combine ginger, paprika, turmeric, garlic, coriander , lemon juice, in a large bowl.

Season well, add to chicken breasts and coat evenly. Cover and leave to marinate overnight in fridge, or a few hours if not enough time.


Grill or fry in a pan with frylight until cooked through.

TEXAS CHEESE FRIES
---------------------------

2 medium potatoes (skin on if using as HEB on red day)
1 tsp smoked paprika
1/4 tsp chili powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp cumin
coarse salt and fresh cracked pepper
1 slice bacon, cooked & finely chopped
HEA allowance of cheddar cheese
2 tbsp diced spring onions,
1 tbsp sliced pickled Jalapeno (jarred on canned)

Directions:

Preheat the oven to gas 7 . Line baking sheet & coat with frylight spray.

Cut each potato lengthwise into 1/4 inch thin slices; then cut each slice into 1/4 inch fries.
In a large bowl, combine cut potatoes and spices toss well to coat.



Place potatoes in a single layer on baking sheet. Bake uncovered for about 25 minutes or until tender crisp, turning once half way through (depending on thickness this may require more or less time).

Remove from oven, top with cheddar cheese, sliced jalapenos, spring onions and bacon bits and return to oven for about 2 minutes, or until the cheese melts.

ASPARAGUS SOUP - slimming eats website

Serves 4 - syn free

500g of asparagus spears, roughly chopped
700ml of chicken stock - I used a chicken stockpot plus water to 700ml
1 onion, finely chopped
some fresh thyme leaves - I only had dried
salt and pepper to season
low calorie spray



Method
Spray a large saucepan over a medium heat with some Frylight
Add the onion and cook until softened.
Add some fresh thyme and asparagus and cook for a further 2 minutes
Add the stock and bring to a boil. Reduce heat cover and simmer until Asparagus is tender (do not over cook).
Remove half the mixture and blend, return to the pan and mix thoroughly.

CORNED BEEF AND ONION PASTY
------------------------------------------

1 weight watchers pitta (1 heb)
1/2 onion chopped
Lean corned beef ( comes in a tin ) or I used 3 slices corned beef from chiller cabinet


Chop and fry the onion in frylighted pan, until softened
Add corned beef and stir until ' melted'
Cut a slit in pitta and stuff with corned beef mix. Secure edge with cocktail sticks
Bake in oven until pitta browned.

THE OMG BURGER

1 onion chopped small
1 red pepper chopped small
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
2 crushed garlic gloves
1 tsp mixed herbs
Salt and pepper
450g beef mince
1 beef oxo cube
1 tsp paprika
2 rashers bacon chopped


Soften pepper and onion in a frylighted pan, add bacon and fry until. Cooked.
Add Worcester sauce, balsamic, garlic, herbs , salt and pepper,
Once cooked put aside

In a large bowl add mince, the oxo cube and paprika, then add the bacon and onion mix

Mix it all together. With the burger press form the burgers , by placing some mixture in then adding a torn slice of low low cheese and then more burger mixture.
Cook in a frying pan for 4 mins each side then into a hot oven for a couple of minutes to cook through and melt the cheese.
