Pebbles + the gangs great grub recipes

MINCE & MASH LASAGNE ( kwise recipe)

Serves 4



INGREDIENTS
Frylight
12 Sheets Lasagne
1 Medium Onion, finely chopped
225g Mushrooms, sliced
450g Mince
1-2 Tblsp Fresh Chopped Parsley ( or any other herb you prefer)
1 Clove Garlic , crushed
4 Tblsp Tomato Ketchup
1 Tblsp Tomato Purée
1 Stock cube, crumbled
4 Medium Potatoes,peeled
Salt & Pepper
1 x 40g Sachet Schwartz Cheese Sauce and milk from HEXA

METHOD
Preheat Oven

Spray an 8" square lasagne dish with frylight

Spray each lasagne sheet with frylight and soak in freshly boiled water. This stops them sticking to each other

Boil the potatoes. Whilst they are boiling, prepare all your ingredients

To a large frying pan, spray with frylight and heat. Fry the onions, Garlic until onion is translucent

Add mushrooms & fry for 2 minutes

Add mince and cook stirring until brown

Add parsley, ketchup, purée, stock cube & seasoning & remove from heat

Mash potatoes and add to mince mixture stirring until well combined

Make up the cheese sauce per instructions

Place 4 lasagne layers at the bottom and cover with half the mince. Top with 4 more sheets of lasagne and cover with remaining mince. Cover with remaining lasagne sheets and top with cheese sauce.

Bake in the oven for about 25-40 minutes or until golden.

Serve with veg or salad

BURMESE TOMATO, FISH & PRAWN CURRY

Serves 2

1 tsp ground turmeric
2tbsp fish sauce
150g firm white fish cubed
150g peeled prawns
1 onion
1 red chilli
3 garlic cloves
1 tsp ginger paste( lazy ginger or 2cm piece fresh )
1/2 tsp paprika
400g tomatoes , chopped
50ml fish or veg stock I used a fish stockpot and water
15g fresh coriander

1. mix turmeric and fish sauce to make a paste add fish and prawns to it, coat well and set aside for 15 mins
2. Put onion, chilli, garlic, ginger in a food processor and blitz to a paste , add a splash of water if necessary
3 frylight a pan and heat the paste for a minute
4. Add the paprika and cook for a minute more
5. Add chopped tomatoes and fry for 5 mins until tender
6. Pour in stock, bring to boil
7. Add fish cook for 2 mins then add prawns
8. Cover and simmer for 5 mins
9. Reserve some coriander to decorate but stir the rest in

SCAN BRAN CARROT & GINGER CAKE

5 scan bran soaked in boiling water, drained & mashed,
add 2 grated carrots, tablespoon of ginger, tablespoon of mixed spice,
5 tablespoons sweetner, half tablespoon cinnamon & 3 beaten eggs,
microwave on high for 7 minutes, or cook in oven 15-20 mins

TARTIFLETTE

A popular French dish, easy to make
Serves 4

1 onion chopped
4 medium potatoes peeled & sliced
4 rashers of bacon cut into small strips
75g Plain philly
60g French camembert/brie or cheddar
Salt & pepper

Fry onion,& bacon in frylight, then add potatoes and fry add 100ml water and allow potato to cook for 6 mins covered.
Mix philly with 3 tbsp water , salt & pepper.
Put potato mixture in a casserole dish, pour philly mixture on top and toss so potatoes are evenly coated.
Cook at gas 5 for 20 minutes until potatoes are cooked. sprinkle grated cheddar or chunks of camembert/brie on top and cook until cheese is melted

CHICKEN BACON STEW
----------------------------
Serves 2 Syns per portion: FREE.

Ingredients
1 sliced white onion
3 thinly sliced leeks
2 slices of smoked bacon, fat removed
2 Chicken breasts
300ml Chicken stock (I used a knorr chicken stock cube)
Frylight
Pepper for seasoning

Step 1: Using a heavy duty pan on a moderate heat, fry the onions, leeks, bacon for about 10 minutes until soft and caramelised.
Step 2: Add the chicken to the pan on a really high heat and brown. As soon it's coated, add the stock and keep on a high heat for about 10-15 minutes or until the stock has thickened and the chicken is cooked.

it's really yummy
 
I added a frosting yesterday , I mixed 2 tbsp plain Philly, a squeeze if a lemon wedge and a tsp sweetener and added it to the top . Yumm

CHICKEN HARIRA

(moroccan soup dish -yummy and filling)

serves 4
small bunch coriander leaves and stalks separated
2 garlic cloves crushed
1 tsp ginger paste (lazy ginger)
1 lemon zest and juice
2 tsp ground cumin
2 tsp paprika
250g tomatoes chopped
100g bulgar wheat
800ml chicken stock
250g precooked chicken torn into shreds
100g spinach chopped

spray pan with frylight finely chop coriander stalks add to pan with garlic , ginger and lemon zest fry gently for 2 mins
stir in cumin, paprika and cook for 1 min more
add tomatoes, bulgar wheat and stock,
cover and simmer for 8 min til bulgar wheat is just tender
stir in chicken and spinach, let spinach wilt then tear in the coriander leaves. season and add lemon juice to taste
serve



 
BROAD BEAN , ASPARAGUS & MINT FRITTATA

1 bunch of asparagus trimmed and slit lengthways
300g frozen broad beans
14g fresh mint leaves
60g cheddar cheese (2 hea portions)
5 eggs beaten
salt and pepper.

cook asparagus and broad beans in boiling water for 8 mins, drain
put them into a frylighted pan, add chopped mint, salt and pepper, add grated cheese to eggs and mix then pour into pan. ensure all is covered. cook for 2 mins then place under a grill until risen and browned.



 
SYN FREE CURRY LOAF
----------------------------
1 tin of chickpeas
1 onion chopped
1 garlic crushed
1tbsp curry powder
1 beef stock cube
Packet beef savoury rice
3 eggs beaten




Empty tin of chickpeas into a saucepan with the water from the tin also, a tbsp curry powder, the onion, garlic,beef stock cube, then simmer for 5-7 mins.
Cook A packet of beef savoury rice as instructions then mix with the chickpeas and stir in 3 beaten eggs .
spoon into a loaf tin . Cook at gas 6 for 20 mins .

Slimming world KFC - a different recipe

This is a different one than I normally follow so I gave it a go and it was really lovely.
Serves 2

4 chicken thighs, skinless & boneless
1 chicken oxo cube,
40g of smash powder
1/4 tsp of - chilli powder,
black pepper ,
paprika and
salt,
garlic granules
1 egg

you can add any herbs and spices etc to the chicken
then beat an egg and dip the chicken in the egg then into the smash mix, back into the egg and back into the mix .
put it in the actifry for 25 mins . Or if no actifry , frylight a pan and pop into the oven.

EGG CUSTARDS
--------------------
1 banana and custard mullerlight
3 tsp sweetener
3 eggs whisked together.

Pour into silicone cupcakes and sprinkle nutmeg on top and bake for 25 minutes gas 6.

Serve quickly as they sink fast.
