Don't suppose the recipes for the samosas and parties are on this tread are they? Amazing!

SAMOSAS
-------------
samosas are what SW class as a tweak so you will need to decide if you are happy making them and classing them as free. ( I did as I only had 2 in a day. )


you need 1 lasagne sheet for every 2 samosas

I made a batch of the filling to cover the samosas and the patties.

A packet of smash or left over mashed potato
1 medium carrot
1 onion
1 tbsp curry powder
Salt and pepper
Frozen Peas & sweetcorn. I used 15g of each but whatever you like is fine.

Optional extra for the veg patties. - 1/2 hea allowance of cheese (15g)

I chopped onion and carrot into small pieces and threw into a pan of boiling water with the peas, sweetcorn, curry powder and a veg stock cube . Allow to boil until tender.
As there was water in the veg and there wasn't much of it left I tipped the lot into a bowl with smash in. It was then enough to make it up perfectly. I stirred it all up added salt and pepper to taste.

Meanwhile put lasagne sheets into a pan of boiling water and cook until soft . Carefully lift out one at a time. Cut in half widthways to give you 2 squares.

Add a spoonful of mix to the middle of the square and fold corner to corner into a triangle. Squash down a bit and press edges with a fork, this was a bit fiddly and some didn't want to stick so I used a squidge of the mixture along some of the edges to act like glue!

When all done, spray with frylight and bake in oven gas 6 - depending on your oven--- the recipe said 30 mins but mine were over done , so keep an eye.

They were quite hard on edges but lovely in the middle but I'm guessing its because of the cooking time. I'd Definitely give it another go.

With the left over mixture , I added 1/2 hea of cheese and mixed through. Then shaped into little patties with a small sized cookie cutter and baked for 10 mins or until slightly browning. They were really yummy.

Just wanted to say I tried the asparagus and mint frittata which was lovely and the chicken harira an that is absolutely delicious! So glad I spotted the recipe! Right up my street so thanks for sharing x

PEBBLES CHEESY, BACON & BASIL PORK LOIN STEAKS
--------------------------------------------------------------------

Serves 2

1/2 hex a of cheese per steak

2 pork loin chops
2 crushed garlic cloves
2 rashers bacon
4 fresh basil leaves
30 g cheddar cheese ( can use mozzarella if you prefer)
Black pepper and salt
Balsamic vinegar


Season pork with salt and pepper
Preheat grill
Grill bacon until just cooked , not crispy
Frylight pan and add garlic,
Add pork and fry briefly to seal both sides not cook through
Keeping steaks in the pan, add bacon ( chopped ) to top of steak.
Chop basil leaves and add to bacon then top with 15g of grated cheese each.
Add black pepper and a drizzle of balsamic
Place under grill and cook until cheese melted and browned .

Absolutely delicious

MUSHROOM & POTATO SAUTÉ
--------------------------------------
Serves 3 decent portions ( 1/2 hex a each serving)

600g potatoes thinly sliced
200g mushrooms sliced
1 chopped onion
4 garlic crushed
1/4 tsp each of thyme, sage & rosemary
200ml veg stock
45g cheese

Frylight pan add onion And herbs and fry until soft
Add potatoes, mushrooms and stock,
Bring to boil lower heat and cover then simmer for 25 mins.
Season, add cheese and cook for further 8 mins.
Serve

Very tasty

LEMON GARLIC CHICKEN
------------------------------
1 butternut squash (peeled, deseeded, in chunks)
baby chantenay carrots
2x red onions
2x courgettes
Potatoes as allowance if on red or free if on green or EE
2 tbsp balsamic vinegar
boneless, skinless chicken thighs
3 crushed garlic cloves
zest+juice one lemon
salt/pepper

spray roasting dish with frylight , add all veg, spray again. Season and add balsamic, garlic and , lemon
Add chicken thighs and roast for 45-1 hr at 200c

SPICED FRUIT SCAN BRAN TEA CAKE
-------------------------------------
5 scan bran
large cup of strong black tea ( brew 2 teabags for about 10 mins)
28g dried mixed fruit (4 syns)
2 beaten eggs,
half teaspoon baking powder,
5 tablespoons sweetner,
2 tablespoons mixed spice.

Soak your scan bran and dried fruit in the tea for about 15 to 20 mins
mix in the other ingredients then put into moulds and bake for about 25 mins
I used a loaf tin and as the syns were 9 for the whole lot, I cut it into 9 making it easy to syn at 1 per slice. You can use it as heb but if not then your scan bran is 5 syns aswell


This is the best one I've tried I think

add all veg to large roasting tray sprayed with frylight and give them a spray with fry light. Season and add balsamic vinegar. Put seasoned chicken thighs between veg. Roast for 40mins at 200c. Mix together garlic, lemon zest and juice. Add to veg and chicken. Cook for a further 10 mins.

KFC Actifry

Slimming world KFC - a different recipe
--------------------------------------------

This is a different one than I normally follow so I gave it a go and it was really lovely.
Serves 2

4 chicken thighs, skinless & boneless
1 chicken oxo cube,
40g of smash powder
1/4 tsp of - chilli powder,
black pepper ,
paprika and
salt,
garlic granules
1 egg

you can add any herbs and spices etc to the chicken
then beat an egg and dip the chicken in the egg then into the smash mix, back into the egg and back into the mix .
put it in the actifry for 25 mins . Or if no actifry , frylight a pan and pop into the oven.

Hi Pebbles - do you leave the paddle in your actifry or remove it to cook the chicken?
This looks yum, and I have an actifry so will be giving it a go at the weekend!

Yes leave the paddle in, trust me its fine and it stays in one piece , some small bits of the crumb coating comes off but not much and my kids love the little bits . Am making it this weekend too. X
