PEBBLES CHEESY, BACON & BASIL PORK LOIN STEAKS
--------------------------------------------------------------------

Serves 2

1/2 hex a of cheese per steak

2 pork loin chops
2 crushed garlic cloves
2 rashers bacon
4 fresh basil leaves
30 g cheddar cheese ( can use mozzarella if you prefer)
Black pepper and salt
Balsamic vinegar

Season pork with salt and pepper
Preheat grill
Grill bacon until just cooked , not crispy
Frylight pan and add garlic,
Add pork and fry briefly to seal both sides not cook through
Keeping steaks in the pan, add bacon ( chopped ) to top of steak.
Chop basil leaves and add to bacon then top with 15g of grated cheese each.
Add black pepper and a drizzle of balsamic
Place under grill and cook until cheese melted and browned .

Absolutely delicious

Did this again this week as we loved it, this time I used mozzarella as I had some in and it was really nice although I preferred the cheddar.

SCAN BRAN CHOCOLATE MINT CAKE
---------------------------------------------

5 scanbran
3 eggs
1 tbsp cocoa
1 sachet choc mint options
7 tbsp sweetener
3 drops of mint extract

soak scan bran in hot water, drain & mash
mix all ingredients together ,pour in a silicone cake tin .
cook in the microwave for 4 to 4.5 mins. Or in the oven for 15 mins or until cooked.


3 syns for the whole cake if using scanbran as HEXB, 8 syns if not

CHICKPEA CURRY
-----------------------

1 packet of beef savoury rice
1 tbsp curry powder
1 veg stock cube
1 tin chick peas
1 onion
2 garlic cloves

Cook rice as instructions on pack.
Empty chickpeas into a pan, add chopped onion, chopped garlic, stock cube and curry powder. Allow to simmer for 10 mins .
Stir beef rice into chickpeas once cooked. Season to taste .

3 jacket sized potatoes sliced in half lengthways giving the shortest height possible, leave skins on
1 red pepper
1 large onion
Sea/rock salt
Black pepper
Garlic clove

Slice onion and pepper and cover the base of a roasting dish.
Chop garlic clove and sprinkle over onions
Add a tsp any dried herbs
Add a couple mills of black pepper
Lay the potatoes on top and sprinkle over a tbsp of rock salt
Spray with fry light and bake for 45- 1 hr or until potatoes are cooked

Peppers and onions will be all soft and caramelised - yummy

PEBBLES RICE & MASH LOAF
------------------------------------

Leftover mash
Packet of savoury rice
2 slices ham chopped
1 spring onion chopped
Small handful peas
Salt and pepper


Make up rice according to packet
Add to leftover cold mash, add spring onion , ham and a hea of cheese . Mix together , put into an ovenproof dish And bake for 10 mins .

I cut it into 4 pieces, perfect for 2 slices in a lunch box.

PENNE GIARDINIERA
-------------------------

400g pasta penne
150g peas
100g feta
100g baby leaf spinach
1 tbsp lemon juice taste then add more if requires it.
Few curls of lemon zest to decorate
Small handful mint leaves

Cook pasta according to instructions until almost cooked,
Add peas and cook for 3 mins more.
Strain pasta into a colander with the spinach in , so the hot water blanches spinach
Return everything back to the saucepan ( no heat switched on) add feta crumbled and stir.
Add lemon juice and mint
Serve and decorate with lemon zest and season.

CHICKEN PARMO
---------------------

Serves 2
2 chicken breasts
1 egg
120g wholemeal bread (HExB each)
60g Low Low spread (HExA each )
Method
1. Using a rolling pin or meat tenderiser flatten the chicken breast.
2. Make breadcrumbs using food processor
3. In a shallow bowl, beat the egg.
4. Dip the flattened chicken breast into the beaten egg, and then into the breadcrumbs until it becomes coated, I then redipped and rebreaded
5. Place the coated chicken breast onto a lined baking tray spray with frylight and pop into the oven gas 7 for approximately 15 minutes.
6. After 15 minutes, remove the chicken breast. Top with the Low Low spread and place back in the oven for a further 10 minutes.
7. Serve with potato wedges and salad / roasted vegetables/ veg of choice.

EGG FRIED RICE & BEEF IN OYSTER SAUCE WITH VEG
------------------------------------------------------

Both dishes free on green and EE

EGG FRIED RICE

serves 4.

198g long grain rice
1 egg
4 spring onions
Fry light
113g frozen peas
1 tbsp soy sauce

Cook the rice according to packet
Finely chop the spring onions

Heat a wok sprayed with fry light, add the rice, fry for 4 mins, add the onions and peas and continue cooking for 3mins.
Season with soy and pepper then push to one side of the pan.

Beat an egg and pour into the other side of the wok, leave for 10 seconds so it begins to set . Use a fork to break it up and mix in the rice. Fry for a further minute before serving.

Chinese stir fry with beef and veg in oyster sauce

Serves 4

6 spring onions
1 red chilli ( I used lazy chilli)
4 garlic cloves
198g mushrooms,
Red pepper
Half head of broccoli
3 large leaves of cabbage
3 tbsp dark soy sauce
1 tsp fish sauce
1 tbsp oyster sauce

I used 3 pieces of steak and cut into strips

Prepare veg, cut spring onions into chunks, peel and finely chop garlic, thinly slice mushrooms, shred the cabbage and cut small florets from the broccoli, dice the pepper.

Mix the soy sauce with the fish and the oyster sauces.
Spray wok with frylight, heat the spring onions, garlic and chilli and fry for 20 secs. Add beef, mushrooms and rest of veg and sauce mixture . Cook for 2 mins then serve

BASH-IT CHICKEN & POTATOES WITH SCARVES ON

Serves 2

For the potatoes

Small potatoes
6 rashers of bacon
Salt & pepper

for the chicken

2 chicken breasts
1 tbsp honey
1 tbsp French mustard
1 tbsp chopped coriander ( I used the frozen type but fresh is fine too)
2 tbsp soy sauce

Preheat oven to gas 6
Peel and boil the potatoes for 15 mins or until just tender .
Meanwhile slit the breasts, but not all the way through, to butterfly them . Bash with a meat tenderiser.
Mix together the coriander, mustard, honey and soy sauce, in a shallow dish, then place the chicken in to marinate. Leave for 1 hr if possible.

If no time then leave while potatoes are cooking.
Drain potatoes, cut bacon into strips and wrap around potatoes. Place into oven dish and spray with fry light, add salt and pepper and bake for 15 mins or until browning.

Place chicken onto a baking tray and bake in oven for 10 mins or until cooked through.

Hey pebs! Long time no speak. How the devil are you? Still at the diet then? After many months (or years!!!) off it I'm back on the wagon. Joined a class with my step daughter in Wednesday and so far so good.
