STICKY CHICKEN
---------------------

Adapted from a recipe by texty f.



Serves 2
2 chicken breasts diced
3 tbsp balsamic vinegar
3 tbsp honey
3 tbsp soy sauce
2 spring onions
1/2 tsp chilli flakes
1/2 tsp garlic granules

Fry light pan and brown chicken, Add chilli flakes , onions and garlic.
Cook for 2 mins more
Mix vinegar honey &; soy together, pour over chicken.
Cook until sauce thickens and starts reducing and sticking to pan.
Serve with sw chips, rice or couscous , and a pitta or wrap

Dauphinoise potatoes
-------------------------
Serves 4
4 medium potatoes
1 clove garlic...
1/2 tsp rosemary
1/2 tsp thyme
1 veg stock cube
70g Philly light
120g cheddar
1/2 tsp mustard powder
Salt & pepper

Put potatoes through slicing attachment on food processor to give thin slices
Place into a large pan and cover with boiling water and add a stock cube, rosemary & thyme.
Simmer for 10 mins
Add Philly, mustard powder and chopped garlic, then grate cheese over top. Simmer for 8-10 mins more. Season and serve

PEBBLES THAI GREEN CHICKEN CURRY
-------------------------------------------------

Serves 3

2 chicken breasts cut into bite sized pieces
1 romaine red pepper cut into thin strips
1 onion diced
1 garlic clove chopped
1/2 red chilli chopped
1 chicken stockpot
Handful of mange tout
3 tbsp Thai green paste ( 3 syns)
1 muller Greek coconut yogurt ( 1/2 syn per pot)
Coriander to decorate


Spray pan with fry light, cook peppers & onion until soft, add garlic, & chilli
cook for few mins then add chicken , cook 2 mins longer, add chicken stockpot and 200ml water. Allow to simmer for 5 mins then add mange tout and 3 tbsp thai green paste. Stir and simmer until chicken cooked through. Turn off heat and allow to sit for a minute then add a muller Greek coconut yogurt . Stir through gently, serve with rice

 
PEBBLES LOADED POTATO SKINS
------------------------------------------
1 jacket potato
30g cheese
2 rashers bacon
Chopped chives
Few little bits of chopped red chilli
1 spring onion
3 tbsp sweetcorn

Zap jacket in microwave, then cut in half, and scoop out potato leaving some in the bases.
Chop bacon and cook in a frying pan.
Mix all ingredients with potato in a bowl then refill the skins. Season
Bake at gas 7 until browned and cheese has melted

 
i got this recipe from the ' 1 syn chicken korma recipe' thread. i changed it a little to suit my taste, but thanks to helenh for starting the post


PEBBLES CHICKEN KORMA

SERVES 2

2 CHICKEN BREASTS
5 MUSHROOMS QUARTERED
1 ONION CHOPPED
2 CHICKEN OXO
2 CURRY OXO OR 2 TBSP CURRY POWDER
1 MULLER LIGHT GREEK COCONUT YOGURT (1/2 SYN)
1 TBSP ANY CURRY PASTE - I USED PATAKS BALTI AT 1 SYN

fry light pan and add chicken diced, add mushrooms and onions and cook until starting to brown. sprinkle oxo cubes / curry powder.
then i added 100mls water and the tbsp curry paste.
simmer for 5 mins then stir through the coconut yogurt .

absolutely delicious. served here with spinach and potato curry (sag aloo)




 


SPINACH & POTATO CURRY

Recipe serves 4

1 tbsp mustard seeds
1 small onion, diced
4 cloves garlic, crushed
2 tbsp grated fresh ginger or 1 tsp lazy ginger
1/4 tsp red chilli
1 tin chopped tomatoes
1 tbsp curry powder
2 tsp ground cumin
1/2 tsp salt
2 cups vegetable stock
2 pounds potato, cut into 1/2 inch chunks
1 pound chopped frozen spinach / 1 bag fresh
1 tbsp lime juice

Preheat pan and add frylight. Add mustard seeds, put lid on and let them pop for a minute (if they don’t pop, turn the heat up!).
Add onions and cook for 5 mins. Add more frylight as needed.
Add garlic, ginger and pepper flakes and cook for another minute.
Add tomatoes (this should deglaze the pan) and cook for 3 mins, then add curry powder, cumin and salt.
Add potatoes and stock (it’s ok if they aren’t fully covered by the stock).
Put the lid on and bring to the boil, once boiling lower heat to a simmer and cook for 15 mins.
Add spinach and cook for 5 mins or until spinach is thawed.
Mix well and cool for another 10 mins. Add lime juice, more spice to taste and serve.

CHINESE BEEF WITH OYSTER SAUCE
---------------------------------------
SERVES 2

450g beef - i used steak
2 tbsp soy sauce
2 tbsp oyster sauce
1tbsp black pepper freshly ground,or 1/2 tbsp black pepper powder
1 tsp sweetener
3 crushed garlic cloves
1/2 tsp freshly chopped red chilli & 1/2 tsp lazy chilli
200g bag of baby spinach leaves
1 tbsp balsamic vinegar
1tsp dried chilli flakes
4 mushrooms sliced

add beef, soy sauce, oyster sauce, black pepper and sweetener to a bowl and stir well to coat.
frylight pan and add the fresh chilli and lazy chilli, the garlic and the spinach. fry for a few mins until spinach wilted - place aside.
wipe pan with kitchen paper and re spray with fry light
add beef mixture, vinegar, mushrooms and chilli flakes stir fry until cooked through.
spoon over spinach and serve with noodles or rice and stir fried veg.


 
I've just had the broccoli and Stilton soup for lunch omg deliciousness

I normally can't be bothered with soups as I find they bore me but this really grabbed my attention. Yummy

CREAMY VEGGIE TAGLIATELLE WITH BABYBEL MELT IN THE MIDDLE BURGERS

recipe adapted from original by viv- thank you

serves 3


for the burgers:-

the recipe asked for mince but i used some steak i had in the freezer. i let it defrost a bit then blitzed it in the food processor, that way it stays in mince consistency not a puree.!

so, either a pack of mince or steak minced up.
6 babybel lights ( 2 syns each or 3 for a hea)
2 tsp garlic granules/powder
1 tsp paprika
1/2 tsp chilli powder
2 beef oxos

for the pasta:-
1 onion chopped
1 red pepper chopped
1 courgette sliced
5 mushrooms sliced
tin of tomatoes
2 tsp oregano
2 tsp tomato puree
2 tbsp of garlic herb philly
tagliatelle

cook pasta as pack instructions and preheat oven gas 6

mix burger ingredients together and season then shape around the babybels spray with frylight and place on a tray in the oven for 10 mins or until cooked. mine cooked really quickly and were succulent and delicious.


fry light a pan and add the peppers, onions and courgettes, cook for 2 mins then add mushrooms and tbsp water.

add a tin of tomatoes & the oregano.

when thats all cooked through, stir in 2 tbsp (30g) of garlic & herb philly, i used tescos brand as philadelphia was out of stock. (1.5 syns)
i used some garlic and chilli freshly ground salt to season

serve with the burgers and a salad or garlic bread reduced fat (4.5 syns per slice in tesco)

really delicious

HAM & LEEK CHEESY BAKE
---------------------------------

Serves 2

3 leeks ( depending on size)
Pack of ham
60g cheese ( 2 heas, 1 per portion)
4 mushrooms
I used 1 tbsp English mustard and 1 tbsp whole grain but you could use any mustard, French, Dijon etc.
I used 3 tbsp reduced fat creme Fraiche because I had to use it up but you could use quark
And about 50 mls milk - 0.5 syn

Preheat oven gas 7
Trim leeks removing very green ends and cut to size to fit your oven dish. If there are pieces left over you can join them up to form another line when you're ready to put them in the dish.

Then place them in a pan of boiling water for 6-7 mins until just tender
Remove from pan and allow to cool enough to handle
Wrap each leek or part of leek in ham and place into dish.
Slice mushrooms and add on top

Then mix the grated cheese, the creme Fraiche / quark and mustard to a paste. Add salt & pepper and a little of the milk bit by bit until you have a sauce ( but not too thin) consistency. The leeks will give out some extra water during cooking so don't make sauce too runny.

Spoon over the leeks season again and bake for 15 mins or until browned

TANDOORI LAMB
----------------------

Serves 3-4

450g lamb steak cut into chunks
200g fat free natural yogurt
6 tbsp tomato purée
4 tbsp tandoori curry powder
1 tsp lazy ginger or a 1cm piece grated
1/2 tsp chilli powder
3 tsp sea salt
3 tbsp lemon juice
Small handful fresh chopped coriander


Place lamb into a dish in single layer.
In another dish mic together yogurt, purée, curry powder, ginger, chilli powder, 2 tsp sea salt and lemon juice.
Pour over lamb and rub into the chunks. Cover and marinate in fridge overnight or minimum of 4 hrs.

Preheat oven gas7 (220) . Bake on skewers , or loose until cooked to your liking.

Serve with salad, ww pitta (1b ) and Sw fries/ potato cubes
