Pepper and onion chutney

Just put this together as I needed to use up some peppers and onions.

Bell peppers finely chopped (i used mainly yellow and a couple of green ones), white onions finely chopped, balsamic vinegar, cider vinegar, sweetener, splash of nutmeg, splash of dried thyme, splash of garlic and chilli salt.

Really, really nice so thought I would share. :)

I put all ingredients in the pan and left it to simmer on a low to medium heat till the vinegar had almost all reduced which took just short of two hours I put my peppers and onion in a stock pan and added the vinegars so the liquid was level with them but not covering them.
