i dont do red days so wont be much help but off the top of my head boiled eggs or mix with extra light mayo and onion and use bread as heb to make a sarnie or tuna, packs of chicken, ham, yogurt, fruit salad

cottage cheese (you just need to pack a picnic knife to spread it on the ryvita!)
Ham (to top the cottage cheese)
Celery sticks and mini pots of low fat houmous (HXB on green or Syns)
I tend to cook a load of meat ie chicken, take that along with some boiled eggs, salad, fruit & some babybel lights.

Not much use now as your probably having your picnic by now, lol
