Ingredients
Boil the potatoes until cooked, but still firm. Drain.
Add the onion and chillies and cook until lightly browned in a pan.
Add the turmeric, coriander, ginger, cumin and tomato puree and cook for about 2 mins.
Add the potatoes and stir.
Add the water or stock and bring to the boil.
Simmer for about 5 mins.
Stir in the chopped coriander and serve.
You could also add a can of chick peas or green lentils
- 450g/1 lb peeled, cubed potatoes
- 1 large onion, chopped
- 1/2 -2 green chillies (to taste), deseeded and finely chopped
- 1 tsp turmeric powder
- 1 tsp dried ginger
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 2 tbsp tomato puree (1 syn)
- 200ml/8 fl oz boiled water or veg stock
- A little chopped fresh coriander to serve
