You can freeze it.
Use it in carbonara - just whisk it up with some eggs.
If you do a seach in the recipe section I am sure I recall some quark recipes.

Quark lemon cheesecake.

I usually use a whole tub to make 2 portions, but you could halve it.

Grate some lemon rind and juice of half a lemon and beat into the quark with about 2 or 3 teaspoons splenda (for a half pack). Pour into a ramekin, put the ramekin into a bain marie ( i use a cereal bowl with hot water in it) then bake in a moderate oven for about 30 minutes. Let it chill in the fridge and its delicious!

Sorry for posting in wrong section. I only looked quickly whilst sorting my daughters tea and only saw summer and winter recipie sections :booboo:
