Ingredients
4 eggs
1 x 250g pack Uncle Ben's Express wholegrain rice
1 tsp curry powder
125g hot cooked smoked salmon, chopped

Method
1. Poach the eggs for 10 minutes.
2. Meanwhile, cut open the packet of rice, add the curry powder and stir. Heat for 2 minutes in the microwave according to the instructions.
3. Pour the rice into serving bowls and top with the salmon. Top each one with an egg.
