Quinoa salad

I just made a delicious quinoa salad with a recipe I adapted. This is great for South Beach and low GI, but the salad would be free on SW green too I think, you'd just need to adapt the dressing.

100g quinoa
Can chickpeas
Red pepper
4 spring onions
Grated carrot

1 tsp tahini
1 tsp lemon juice
1 tsp olive oil
1 tsp mustard
2 tsp balsamic vinegar
drop agave syrup
crushed garlic clove

Cook the quinoa and stir it into the other salad ingredients. Mix together the dressing ingredients, then pour over salad.

This makes enough for 2 generous lunches and is very yummy!

I laos love Quinoa, I always boil mine with onion and a little stock to add flavour. Dont cook it often enough though.
