Actually just found one myself in allrecipes so may give this one a try as it has good reviews.
I remember my consultant saying something about corn and trying to avoid it so may leave that out.
Original Recipe Yield 10 servings
Ingredients
5 ml vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
130 g uncooked quinoa
355 ml vegetable broth or Chicken broth
2 g ground cumin
0.4 g cayenne pepper
salt and pepper to taste
165 g frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
25 g chopped fresh cilantro
Directions
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
Not sure what your consultant is talking about - no reason not to have sweetcorn in your recipe.
But back to the quinoa, pretty much any cous cous or rice recipe could be used but the bbc good food website is always a good place for recipe inspiration.
