Quorn pieces in sweet n sour sauce

Start cooking Tesco easy cook brown rice in water, in the bottom pan of a steamer, with lots of brocolli, carrots and peppers in the top pan of the steamer (use frozen – quicker). Fry frozen Quorn chicken style chunks in 1 teasp olive oil til brown. Remove from frypan and set aside. In same frypan add some pineapple cut into bite sized pieces – fresh is best, but you can also use x 2 tinned rings cut small – sprinkled with ground ginger. Meanwhile, in a large jug mix 2 tbls vinegar, half tbls 'half-spoon' sugar, half tbls tomato ketchup, 2 teasp cornflour and half pint of water. Pour this over the pineapple and also add the cooked Quorn. Boil and then simmer for as long as it takes to cook the rice (rice takes 25mins, so the sauce, quorn and pineapple will take a bout 15-20). Serves 2 easily. Delicious way to get your Chinese take-away type of fix!!!
