    KB asked for some of my recipes so thought it might be nice to do a thread for us to share recipes, most of mine will be none fast ones although this first one is ok on a fast day....

    Spicy tomato chicken
    195 cals serving 4

    Ingredients
    500g/1.2lb chicken breast
    3tbsp tomato purée
    2tbsp clear honey
    2tbsp Worcestershire sauce
    1tbsp chopped rosemary
    250g/9oz cherry tomatoes

    Cut chicken in to 1" chunks & place in bowl
    Mix together tomato purée, honey, Worcestershire sauce & rosemary to make a glaze
    Add the chicken stirring to coat evenly
    Alternate a piece of chicken & a cherry tomato on to a skewer
    Spoon over any remaining glaze
    Cook under a preheated grill for 8-10 minute turning occasionally until chicken cooked
    Serve with salad on down day or cous cous or rice on up day

    Oh yum, that sounds gorgeous! Unfortunately my recipes are more along the lines of "chuck it in a pot and see what happens" Looking forward to more!

    Layered Vegetable Gratin
    Serves 4 331 cals

    Ingredients
    225g/8oz carrots
    225g/8oz parsnips
    500g/1.2lbs potatoes
    90g/3oz flora light
    25g/1oz plain flour
    300ml/1/2 pint semi-skimmed milk
    1 egg beaten
    25g/1oz freshly grated parmesan
    salt & pepper to taste

    * Cut the carrots & parsnips in to thin strips & cook in boliing water for 5 minutes, transfer to oven proof dish
    * Peel & dice the potatoes in to 2cm/3/4" cubes, cook in boiling water for 6 minutes & drain well.
    * Gently melt half the flora & stir in the flour, remove from the heat & gradually stir in the milk
    * Return to the heat & stir until thickened. Season with salt & pepper
    * Beat in the egg & spoon over the carrot & parsnips. Arrange the potatoes on top & sprinkle with cheese
    * Dot the cheesy potatoes with the remaining flora. Bake in a pre-heated oven at 180c/350f/gas mark 4 for 1 hour until the vegetables are tender

    Honestly I'd up the cheese & put some in the sauce too, probably add another 40 cals a portion but worth it. Was nice though x

    Right I'm doing this one this week. My husband will spend all his time looking for the meat...
    Could you use skimmed milk do you think?

    Recipe was originally skimmed but I don't do skimmed milk ;) I think maybe do some meat & use it as an accompaniment as it's not really a mans meal although hubby enjoyed it (he'll be in the fridge eating raw chicken by 9 ;))

    Chorizo & potato frittata
    500 cals if serving 4

    Ingredients
    300g potatoes
    200g chorizo
    Small red onion
    6 medium eggs
    100ml cream
    40g Parmesan
    Salt & pepper

    Peel & cut potatoes in to small chunks & boil for 5-6 minutes until soft & drain well
    Fry chorizo for 5 minutes then add onion & fry for another 5 minutes
    While that's cooking mix eggs cheese & cream together & season
    Remove frying pan from heat & take out a few pieces of chorizo to sprinkle on top. Then add egg mixture
    Cook on low heat for 15 minutes then transfer under the grill to finish off

    I served with salad so on a non fast day around 550 cals for a filling meal.

    Btw I reckon in the frittata you could leave the cream out making it lower cal & fat, really don't think it added anything to it
