Creamy Chicken Florentine Soup
This soup is really rich and creamy, as well as filling.
Ingredients
Fry onion and garlic gently until it softens.
Add spinach and chicken until heated through.
Add salt and pepper.
Add cream cheese until it melts (turn heat right down for this).
Add chicken stock.
Cook until it reaches boiling, then simmer for 5 minutes.
Garnish with herbs and parmesan if desired.

- 1 tbsp olive oil
- 1 onion
- 2 cloves garlic
- Pinch salt and pepper
- 280g spinach (can use thawed frozen for ease)
- 2 pre cooked chicken breasts, cubed
- 60g cream cheese
- 750ml chicken stock, low salt ideally
