Puddings Rice Gateaux (Gateau de Riz)

I love this recipe as it looks really good so its great for showing off and tastes like it should be massive on syns! I've got a picture of it too but I can't seem to link to pictures yet!

Gateau de Riz
Serves 12


1.5 syns a serving on Green and Extra Easy
3.5 syns a serving on Red


Ingredients

700ml Skimmed Milk (11 syns)
300ml Water (0 syns)
2 tbs Agave Nectar (6 syns)
1-2 tsp Vanilla
125g Pudding Rice (0/22.5 Syns)
1 tbs golden syrup (2 syns)
4 medium eggs


Method

  1. Bring the liquid to a rolling boil with the vanilla and agave. Lower the heat, add the rice and simmer for 30 minutes or until the rice is tender and most of the liquid is absorbed.
  2. Leave to cool for about 45 minutes.
  3. Gently beat the eggs and fold into the rice mixture.
  4. Spray an ovenproof dish or cake tin with low fat spray oil. Mix the golden syrup with the water, simmer in a pan until bubbling. Swirl around the base of the tin to give an even coating.
  5. Spoon the rice mixture into the dish and place in a Bain Marie in the oven for 45 - 60 minutes or until the pudding is firm to the touch and a knife comes out clean.
  6. Allow to cool before upending on a plate.

To make a traditional rum and raisin gateau de riz:

Soak 56g mixed dried fruit in 35ml Rum, drain and add the fruit to the rice and the rum to the sauce. Add 1 syn per serving.
