Rice Pudding Recipe Wanted!

I use 2oz of rice per 1pt fluid. I tend to make 2pints and use 1 pt of skimmed milk and 1 pint of water and 2-3 tblsp sweetner and a generous grating of nutmeg. Bake in oven for about 1.5 hours. Once it's cooked, I stir in a vanilla muller light yoghurt in as it thickens it up and makes it go further and it's yummy!

Milk version - 2oz pudding rice + 2 tbsp sweetner + 500ml semi milk (2 HA choices ie one each) in a pyrex dish. cook at 140deg for 1 1/2 hours - serves 2 generously

Or, for a no milk version - boil 50g pudding rice in water until soft. strain thoroughly then mix with 1 muller light and maybe fruit - makes 2 portions.

I like toffee muller and chopped banana
blackcurrant muller is good
vanilla choc muller is good.

I have made Rice pudding today in the micro and it tasted lovely.

Serves 1

28gm Pudding Rice
250 ml skimmed milk(A choice)
1 splenda pellet
grated nutmeg

Put rice in micro poof dish, add milk & sweetener
Grate nutmeg on top

Cook on Full power 5 minutes
then cook on simmer for 14 minutes

This made a generous helping.

And was cooked while I washed up dinner pots lol
