ROASTED TOMATO AND BEETROOT SOUP

Ingredients

500g tomatoes
1 clove garlic crushed
1 onion chopped
4 beetroots chopped
500mls vegetable stock
1 teaspoon dried basil

Method

Roast tomatoes and garlic with Frylight until soft (approx 40 mins)

Heat a pan and fry in Frylight the onions and beetroots.

Poor in the stock and simmer until tender add basil.

Add tomatoes.

Leave to cool then puree, add more water at this stage if its too thick.

Season to taste.
