Bag of Rocket leaves
Red onion
250g cherry tomatoes on the vine
2inch slice french stick (3pp)
4 slices back bacon (6pp)
2 tbsp Olive oil (8pp)
Coop Truly irresistible Balsmic vinegar (0pp)

Leave tomatoes on the vine, drizzle 1tsp of the olive olive on them and roast in medium oven for 10 minutes then allow to cool.
Snip bacon slices into strips and fry. Cut the bread into croutons and fry in same pan used for bacon.
Slice onion.
Throw all into a salad bowl.
Mix remaining olive oil with about 1tbs balsamic and pour over salad then toss.

This will easily serve four or five as a side dish and goes lovely with a bbq.

The reason I specify Coop balsamic is because some balsamics have pp but that one doesn't. Also, the original recipe I saw for this suggested using lardons instead of bacon. A 250g pack of Sainsburys lardons is 16pp and there is a lot of fat in them. If you are veggie, you could leave the bacon. For a more healthy option, make croutons in the oven using low-cal spray, do the same with the tomatoes and adjust pp accordingly. Personally, I prefer to sacrifice a couple of extra pp as I find I am less likely to want to snack if my food is tasty.

Based on 4 people, this is about 4pp per serving.
 
You could also use bacon medallions to reduce the PP's.

Mmmm... a very tasty sounding salad! I didn't know most balsamic vinegars have pps, will have to watch out for that. I often use red wine vinegar and don't give it a pp value, hope I haven't been wrong.
