Salad dressing?

Hi all,
I've recently started cruise,and love salad for my PV days.The only recipe for salad dressing I can find is in the book.It sounds great,but I was a bit concerned about the oil in it.Other than balsamic sprinkled on,anyone have any tasty recipes/ideas? I've tried a search,but not had much luck.TIA
