Loads of veggie recipes in the link in my siggy. My fave at the mo would probably be my lentil shepherds pie, it's soo yum!
 
I found this on Alines link to veg society,
So many recepies on there, and I've never looked at it before.
I'm making this over the weekend, it just looks so lovely and tastey!

That's Fridays meal sorted, I'll let you know what it's like, I just know it's going to be sooo good :)

one of my fave things to make: mixed veggie rice

really simple too, uses:

brown rice,
bag of mixed frozen veg,
frozen diced onions,
tinned sweetcorn,
tinned kidney beans

all cooked and just put in a tub together! anything can be added to it, chopped up veggie sausages, quorn ect... and it can be eaten cold :D

Vegweb has lots of recipes too and you can search by category and main ingredients. I always go there to look for quick and easy recipes (I'm too lazy)

easy and simple, i cant cook anything complicated without messing it up! this one dosent have to look all pretty and tidy, just a big old, yummy mess! :D
 
Tofu bolognese

This recipe is easy, tasty and quick!

Ingredients for two:

- small pack of soft tofu (cut it into tiny cubes)
- 2 tomatoes (or half a can of tinned tomatoes)
- half cup of sliced fresh mushrooms (or half a can of tinned mushrooms
- 1 small onion diced
- 1 clove of garlic mashed
- 4 tbs black olives
- fresh herbs (e.g. parsley or basil)
- 1 tbs olive oil
- salt and pepper to taste

- whole wheat spaghetti

Directions:
  1. In a saucepan put the onion, garlic and olive oil. Let it fry a bit.
  2. Add a few tbs of water and the other ingredients (tomatoes, mushrooms, olives, tofu, herbs and spices), let it cook for 15 minutes.
  3. Add the cooked spaghetti and mix everything.

those ingerdiants will be in my trolley on shopping day! but ill substitue the olives for something else as i dont like olives, garlic dosent agree with me so i wont use that one, but ill try that one out! :D

Quick mushroom stroganoff

Mushrooms
Oil
Milk
Mixed herbs
Cornflour

Sauté mushrooms
Add milk, around half pint- depending on amount of mushrooms
Add mixed herbs
Simmer for a few minutes - while stirring
Thicken with cornflour

Serve with rice or on wholemeal toast.

Takes minutes, so quick.
If you have longer or want to change recipe, add onions or chopped quorn.
 
Nice easy and delicious high protein scrambled tofu. You can have it on toast, with baked beans and fried mushrooms, in pitta bread, mixed into a noodle stir fry .......

spray a frying pan with frylight and cook your mix which consists of

1 block or packet of tofu mashed up with flavourings. Tumeric is essential and some sort of salty stock like bouillon pwder, celery salt or herbamare, balsamic vinegar and/or veggie worcester sauce and if you've got it some nurtitional yeast is nice too.

I've just thought that adding some tiny pieces of pickled red pepper would be pretty and delicious
 
Thank you both Karen and Micci. Mushrooms and tofu are some of my favourite foods, I may try those recipes soon once they sound quick and easy :p

vegan chilli con carnne

ingrediants:
frozen or fresh onions
dried soya mince
chickpeas
mixed beans
tinned tomaotes
chilli powder packet
water

if you like it hot:
2 spoons of paprika
2 spoons of hot chilli powder
plenty of fresh chillies

the chickpeans and beans i buy are all dry, so i leave them soaking overnight first.
as is the soya mince, but i only soak this for 30 mins.

find a big pan, just shive the lot in!
soak the mince for half an hour, to plump it up a bit, once its ready then drain it of all excess liquid,
put it all in the pan as well as the beans, chickpeas, tomatoes, chilli mix, and (spices if you wanted to add them)
leave to boil for roughly 20 - 30 minutes, when its almost ready add the frozen onions, they only need a few minutes cooking time so they go in the last.

then its done and ready to eat.

i always make enough to feed a family, so theres always tons left so it all goes in the freezer :D

that's my sort of cooking, shove it in a pan and cook it :) :)
 
cherry almond muffins (vegan)

makes 1 dozen muffins

225g/8oz plain flour
65g/2 1/2 oz sugar
2 teaspoons baking soda
1/2 teaspoon barcabonate of soda
1/4 teaspoon salt
5 teaspoons rapseed oil
175ml/6fl rice or soya milk
175g/6oz soya yoghurt, plain or vanilla
2 teaspoons almond extract
130g/ 4 1/2 oz fresh cherries, pitted and halved
115g/ 4oz sliced almonds

pre-heat the ovan to 200c/400f/gas mark 6. lightly grease a twelve hole muffin tin.

in a large bowl, sift together flour, sugar, baking powdrer, barcabonate of soda and salt. create a well in the centre and add the oil, rice milk, yoghurt and almond extract. mix witha wooden spoon until combined. fold in half the almonds and all of the cherries.

fill the muffin cups 3/4 full; press the remaining almonds into the tops of the muffins. bake for 18 - 22 minutes, until a cocktail stick or knife inserted in the centre of one comes out clean.

i havent tried this recipe yet, but its in one of my books and it sounds amazing! theres a few really nice looking muffin recipes in there

It has less sugar than most muffin recipes so it's a must try for sure;)

its from a book i got at the weekend, the books called "vegan with a vengeance"
theres some really good soup recipes in it aswell!
