When I'm in a hurry and want to just get something in my stomach as quickly as possible I do either one of these:
Cajun chicken with new potatoes, corn on the cob and salad:
Preheat oven to gas mark 6, get your potatoes on to cook - cut them in half to speed up cooking time. Dredge a chicken breast with some cajun spices. I like this one

and then chuck it in the oven for 20-30 minutes depending on the thickness of the breast. Prepare a salad. When the potatoes have been boiling for about 12 minutes put the corn on the cob in the same saucepan for the last 8 minutes. If you've got an actifry you can make some chips instead of new potatoes if you like.
Salmon stir fry.
Preheat oven to gas mark 6. Wrap a salmon fillet loosely in foil (spray the foil with a little spray oil) and place on a baking tray, bake in the oven for about 20 minutes. Meanwhile prepare some egg noodles (I like buckweat noodles which are called soba) according to packet instructions (these usually take about 5-8 minutes). Spray a wok with oil (or use 1 tsp oil for 2 syns) and add a packet of ready prepared stir fry vegetables. Add some garlic, ginger and chilli if you like and a splash of soy sauce and worcester. Once the veggies are done stir in the noodles and plate up placing the salmon fillet on the top.
Whoops! Just remembered you don't like fish - replace the salmon with chicken - I'd sprinkle a little bit of chinese five spice over it before baking it though!
Omelettes are super quick. One of my favourites is a bacon, red pepper and spinach one. So beat 3 x eggs, fry off some bacon strips and then add some red peppers from a jar for a minute, add some spinach and let it wilt down a bit and then add the eggs. Cook on the hob and then if you want to add a sprinkle of grated cheese - maybe half a hexA worth? and cook under the grill. Serve with a salad
