I do like the cranberry too. I also love the lemon bar!
My consultant told me that some of her clients have made a cheesecake with a crushed lemon bar with a keylime pie mix-a-mousse. I believe it's devine! I haven't had success with the mousse to date, not sure where I am going wrong!
Apparently the trick to mix a mousse is very cold water. I was having this discussion with my counsellor last week a mine so far have tended to end up in clumps around the mixer. Will let you know if it works.
