Speedy Prawn Curry

Each serving is:

4 garlic cloves, peeled and crushed
2.5 cm piece root ginger, peeled and grated
2 tbsp curry powder
400g can chopped tomatoes
1/2 tsp artificial sweetener
550g cooked and peeled tiger prawns
200g fat free natural yogurt
salt and freshly ground black pepper
fresh coriander and lime wedges to serve.


Place the garlic and ginger in a pan with the curry powder, tomatoes and sweetener. Bring to the boil, cover and simmer for 8-10 minutes.
Add the cooked prawns and cook for 2-3 minutes or until they are warmed through. Remove from the heat and stir in the yogurt. Season well and serve immediately garnished with chopped coriander and lime wedges.

Thanks for sharing your recipe, I am definitely going to try this, as I am new to slimming world and this looks quite easy.
I just wondered what make of fat free natural yoghurt you use?
