Spicy Cabbage Soup


I have a large cabbage in my fridge that I want to use before it goes off, I am determined to not throw any food away!

I am going to make this recipe today:-

Spicy Cabbage Soup

1 medium onion
large cabbage
1 large or 2 medium potatoes
teaspoon chilli powder or ? fresh chilli
teaspoon ground coriander
teaspoon ground cumin
teaspoon ground fenugreek (optional
1 litre vegetable stock
200g cooked butter beans
2 tablespoons olive oil or vegetable oil

I think if I leave out the oil and use a little frylight it will be free on an EE day.

I'm also going to make it with chicken stock as I made a lot of chicken stock last night with a couple of chicken carcasses, but I've skimmed the fat off so I think this will stay free?

Well I made the soup, and I blended it all up, but I think it needed less butter beans really, as the taste of them in the soup is a little overpowering, still, not bad, just needs a little tweaking!
