Another fishy recipe for my fishy week. Had these for lunch - scrummy!

Spicy tuna fishcakes
Serves 2 / 0.5 syn on Extra Easy

Ingredients:
400g potatoes - mashed. Ideal for leftover mash
1 tin of tuna
2 spring onions - finely chopped
Half a small chilli - deseeded and finely chopped
2 tbsp EL Mayo - 1 syn
Salt & pepper

Method:
Mix all the ingredients together well and shape into 4 patties.
Heat a frying pan until fairly hot with a few squirts of frylight.
Fry until browned - about 3-4 mins on each side.

I served mine with mixed leaves, a lemon wedge and some sweet chilli sauce - 1 syn a tbsp.
 
Sarah, these sound really nice. In your opinion would you say that they can be made the evening before and used for a work packed lunch or even for a party buffet?
 
Not sure if the texture would be quite right eaten cold... Kinda like cold mashed potato if you get what I mean?
I reckon that mini ones would be fab warm for a party though
