Sweet Balti chicken curry

Ingrediants

4 chicken breasts- chopped
1 green pepper - chopped
1 onion - chopped
tomatoes on vine 4 - chopped
2 tsp tumeric
1 tbsp ground almond
1 tbsp tomato puree
1 tbsp of curry paste (any i use balti)
1 tsp pureed ginger
1 tsp pureed garlic
1 tsp sugar to taste
2 tbsp low fat yoghurt
1 knorr chick stock pot
2 tsp mango chutney
1 tsp of garam masala or curry powder
6 mushrooms - sliced
1 pint of water
creamed coconut about 2tsp



Ok this is easy
take onions, tomatoes and pepper and put in pan with pint of water and tumeric - bring to boil then simmer for 2o mins until veg is soft. turn off and leave to cool.

In separate pan fry chicken, mushrooms, in fry light (sometimes i add olive oil) then add garlic, ginger, and tomato puree, and curry powder or garam masala cook until chicken cooked through.

Then puree your veg - as smooth or as lumpy as you like. Put it back in saucepan and add chicken mixture along with knorr stock pot.
Simmer for 15 mins - then add ground almond, sugar and yoghurt, mango chutney. Simmer for further 10 mins

Thats it - this is lovely and feeds 4 - my teenage kids love it.

I haven't pointed it but will pop back later and do it - I roughly worked it out to be 3.5 points though

Looking at the ingreds i would say no more points than 5?so that brill.
