Pinch of dried chilli flakes/finely sliced red chilli (OPTIONAL)
Grated fresh ginger, approx 1-2 teaspoons (OPTIONAL)
6 TABLESPOONS Sweetener
6 TABLESPOONS Malt Vinegar
1/2 pint Chicken Stock (I make it with 3 chicken oxo cubes)
Carton of passata
Salt & pepper
Mix the sweetener and malt vinegar together and put to one side.
Add the grated ginger and chilli flakes (if using. - quantities are variable, and after a while you'll find the levels that work for you) to a large frying pan (you can use an ordinary pan, but it will thicken quicker in a frying pan).
Add the carton of passata to the pan and bring to a simmer.
Add the chicken stock and the sweetener/vinegar mix to the pan. Bring to the boil.
Add a little salt and pepper but plenty of soy sauce.
