Thai Curry for 1

    Diabetic/Low carb
    Really delicious and ready in 15 minutes, and about 300 to 350 cals (without rice)

    1 skinless boneless chicken breast cut into cubes
    A handful of frozen veg, my favourite is Tescos frozen grilled meditterranean veg
    3 or 4 okra topped and cut up into pieces
    A good rounded tsp of red thai curry paste
    a pinch of chilli flakes if you like hot
    Few splashes of Nam Pla fish sauce
    1 Philadelphia light minipot (35g)
    1 Tbs chopped fresh corainder leaf

    Put the veg, chicken, okra, chilli flakes and thai curry paste in a small pan or frying pan, add a little boiling water and stir to mix in the curry paste. Bring to the boil and then simmer for 10 minutes till the chicken is cooked through.
    Turn off the heat, add a few splashes of Nam Pla and stir in the philadelphia so that it melts and makes a creamy sauce.

    Serve with the coriander sprinkled over the top. I just eat it as it is as im low carbing and dont eat rice. Its pretty filling on its own anyway.
