Thai Salmon Rice

Tried this and it's lush <3 if anyone likes thai food or just likes something a little bit spicy than this is fantastic, so easy to do as well so if your rushed of your feet i'm sure you'll find time to do it!

Thai Salmon Rice (Serves 2) 11ProPoints per serving.

low fat cooking spray (good ol' 1 cal)
2 shallots, chopped
2 teaspoons Thai 7 Spice
80g (3oz) drive Thai or Jasmine rice
100ml (3 and a half fl oz) light coconut milk
300ml (10 fl oz) vegetable stock
150g (5 and a half oz) green beans, trimmed and chopped
2 x 100g (3 and a half oz) skinless salmon fillets

To serve
a handful of fresh coriander leaves
a lime, cut into wedges

I didn't add the corriander or the lime.

1) spray a large lidded pan with the cooking spray and heat until hot. Add the shallots and cook for 2 mins, stair in the thai 7 spice and cook for a minute before adding the rice and stirring to coat. Pour over the coconut milk and sotkc, bring to the boil, cover and simmer for 2mins

2) stir in the beans and then place the salmon pieces on top of the rice. Cover and cook for 10-15mins until everything is cooked through.
 
O M G... I was just thinking this morning, would salmon go with thai green curry.... This will do, ta :D
