Good morning diary, happy Friday. Friday AND payday, what more could you want!?
Even though this has been a short week, work-wise, it feels like it's gone on forever! Can't wait to clock out today and spend the majority of the weekend chilling. Looking forward to getting my nails done tomorrow. It's been about 8 weeks since I last had them done, as I missed my last appointment! I was meant to get them done a few weeks ago ready for going to York, but I got the days mixed up and then she couldn't fit me in! I had been glueing them on for ages lol and in the end took them off completely and just put a little glue-on set on my nails instead. Anyway, they're off now too and it feels so strange to not have nails!! I've been getting them done for almost three years now and have never gone without them, so it's very weird. I keep making loads of typo's lol!! Anyway, once my nails are done I'm definitely going to have a trip to the Metro. I share a car with my dad, and he has OK'ed it for me to have it tomorrow as he doesn't need it. So me and my mam are going to have a girly day. We are going to ask my Aunty Linda (my mams sister) if she wants to come too - don't think she will, but the offers there anyway. Should be a nice day and hopefully I'll get myself a few nice treats!
Oh yeah. Yesterday I was meant to be having risotto for tea, wasn't I? Well, I got home and there were no peppers in, which meant the Quorn and pepper risotto was out of the window lol! Then I thought, oh I'll make some pasta and Quorn meatballs. But we were out of chopped tomatoes too, so that was no good!! Anyway, I ended up having a right concoction, but it was strangely very nice!! I cooked some Savoury Rice in a pan, whilst in another I fried off some Quorn meatballs and a red onion with a little garlic and chilli. Once the rice was done, I added it to the frying pan with the meatballs and onion and also added a little pouch of frozen veg. Gave it all a big stir and just let it fry off and let the frozen veg cook. I added some soy sauce, a little tomato puree to thicken it up and some crushed chillies. It didn't look the prettiest of dishes, but it was tasted so good!! It's amazing what you can throw together with the odd little bits that are lingering in the back of the cupboard / fridge lol! And to think before Slimming World I couldn't cook at all! Love it
Have really enjoyed my Green days the last couple of days, but today is time for a Red day. I'm really craving my chicken and bacon salad and (as it's payday) I'm going to treat myself to an M&S teriyaki beef salad thing for lunch, yum!!
