Oh plz tell me this is sw friendly and it look gawjus on telly which he made today mmmm. Also just noticed olive oil surely you can use fry light???

Gino D’Acampo: A delicious Italian meal of spaghetti & beef frittata with rocket
Serves 6
Ingredients
3 tbsp extra virgin olive oil
1 medium onion, finely chopped
1 carrot, peeled and finely chopped
500g extra lean minced beef
400g passata
Salt and freshly ground black pepper
300g dried spaghetti
4 large eggs
4 tbsp chopped flat-leaf parsley
50g freshly grated parmesan
100g rocket leaves

Method
1. Heat 2 tablespoons of the oil in a large frying pan and fry the onion and carrot for 5 minutes until soft, stirring occasionally.
2. Add the minced beef and continue to cook for a further 5 minutes, stirring continuously until coloured all over.
3. Pour in passata, season with salt and pepper and continue to cook over a medium heat for 10 minutes, stirring occasionally.
4. Meanwhile, cook the pasta in a large saucepan in plenty of boiling salted water until al dente. Drain and add to the pan with the meat sauce. Stir well and leave to cool. Preheat oven to 180 degrees/350 F/gas mark 4.
5. Break the eggs into the meat sauce and pasta in the pan and add the parsley and the grated Parmesan. Mix everything together well.
6. Brush a little oil over a 28cm-diameter baking dish with sides about 5cm high. Tip in the pasta mixture and spread out, ensuring it is all levelled up beautifully.
7. Cook in the middle of the oven for 20 minutes until crispy and set. Remove from the oven and allow to rest for 5 minutes.
8. Transfer the frittata to a serving plate and scatter the rocket on top.
Serve warm or cold
 
Yes you could adapt this no problem at all. Replace the olive oil with olive oil frylight and either syn or HEA the parmesan. Everything else is free on EE.
 
mmmmmmmmmmmmmm i would have to half the ingrediants cos was loads there mmmmmm cant wait to try it out now
