Hmm, I've never used it myself (quorn was a big enough jump)... urrmm.... maybe make a casserole with it, loads of veg etc, then pop some tofu in?

There again, I've never touched tofu so don't know! Do you have to cook it? Can you put some lemon juice and black pepper on it and have it in a salad?! x

Garlic Ginger Tofu

4 cloves garlic, minced
1 good knob root ginger, minced
1 lime
1 tablespoon soy sauce, or to taste
900g (2 lb) firm tofu

  1. Heat frylight in a wok or frying pan over medium heat. Stir in garlic and ginger, and cook for 1 minute. Add tofu to the pan with soy sauce, and stir to coat. Cover, and continue cooking for 20 to 30 minutes.
  2. Squeeze lime juice over tofu before serving.
