A lady made this at a taster the other weeks & it was gorgeous, really sweet & filling:
6 fl oz sugar free tropical fruit squash
1 sachet powdered gelatine
3 egg whites
5oz low fat natural yoghurt
Finely grated zest of 1 lime + juice of 1 lime
Place tropical fruit squash in a pan & sprinkle on gelatine. Heat until gelatine dissolved.
Whisk egg whites until they hold soft peaks. Continue to whisk hard while adding yoghurt & lime zest.
Still whisking hard, pour in the hot gelatine & squash mixture until smooth & evenly mixed.
Quickly pour into a 2.5pt ring mould. Chill in the fridge until set. The mixture will separate into two layers.
Chop fruits of your choice & stir in the juice of one lime.
Run a knife around the edge of the ring to loosen the mixture. Dip the mould in cold water & turn out mousse mixture onto a serving plate. Place prepared fruit in the centre of ring & serve immediately.
Can be made with other flavours of sugar free squash.
