Turkey Stew

    2 tsp. Spray light
    ½ onion, chopped
    1 clove garlic, minced or ½ tsp. garlic powder
    cooked turkey, chopped
    4 small carrots, sliced
    1 stalk celery, sliced
    2 potatoes, diced
    1 can tomatoes, chopped
    1 cup water
    Season to taste with pepper​
    Heat oil in frying pan. Chop onion and mince garlic. Add the onion and garlic to the oil; stir for two
    minutes. Add the turkey and stir until heated. Wash and slice the carrots and celery. Wash and
    dice the potatoes. Add the carrots, celery, potatoes, tomatoes, and water to the turkey mixture.
    Bring stew to a boil, and then lower the heat and simmer for 30 minutes or until vegetables are​
    tender. Add pepper before serving. Refrigerate leftovers.
