Just had a great low syn satay chicken...
Makes two chicken skewers
1 tsp sugar free peanut butter (1.5 syns)
2 tsp milk from allowance
pinch of chilli flakes or fresh chilli
1 garlic clove (mashed) - optional
Add any free food you like e.g. slices of green pepper
Mix and baste chicken (you can use it as a marinade too) or just pour over chicken (and veg) already thread on skewers.
Grill until cooked through.
I had it with stir fry (fry light) mushrooms, thinly sliced ham and strips of egg.
Was lovely!
