Green Day Vegetable Hotpot with Quorn Chicken Style Pieces & Mustard Mash

This is something I made up tonight. Hubby wanted bangers & mash & I wanted something warming & filling so made this...........
I used a few chunks of Quorn chicken style pieces, a handful of petit pois, 1 onion, half a tin of tomatoes, 1 carrot, cannellini beans, red lentils, 1 piece of frozen spinach, garlic, 100ml of vegetable oxo & cooked in a pan for around 30 mins until tender. I also added a sprinkle of hot chilli powder to give it a nice spicy taste.
I make my mash by using a vegetable oxo cube in the water with some mustard powder. Once cooked in the pain drain & mash. Makes lovely creamy mash syn free :D
