Vegetable tagine

    Just thought I would share my recipe that I made last night for vegetable tagine:

    1 onion and 2 cloves of garlic softened in fry light
    Add generous spoonful of tagine spice and cook for 1 min to release flavours
    Add tin of chopped tomatoes, 3 cubed sweet potatoes, handful of chopped green beans, tinned of drained chickpeas.
    Half a dozen prunes, chopped

    Bring to the boil, season to taste and cook at 180 for 1 hour.

    I added 1 chicken breast between 2 of us for my HE as OH doesn't do vegetarian and we had it with cous cous and salad. Very warming and satisfying...although we were a little windy!!
