What have you just eaten??

I had a late brunch of what my partner has christened the 'Omelette of Deliciousness'. We shared it between us with some baked beans - it was 4 eggs, 2 tbsps water, 2 tomatoes, chives, 1 tsp each of basil, oregano and thyme, lots of black pepper, 75g light Philladelphia (1 HEA between us) and 1 tbsp garlic olive oil (1 HEB between us) and a pinch of salt.

I adapted a recipe I found in sainsburys for gnocchi, made SW kiev with salad, was a lush dinner

Well it was just normal gnocchi, which is actually quite low in syns 100g is 1.5 syns. Just made some tomato sauce.. Onions, garlic, Worcester sauce, fresh basil, a little red wine, mixed herbs, chopped tomato. Swapped brown sugar in recipe for sweetener (still tasted really good) Cooked gnocchi, added to sauce then roasted some cherry toms and put on the top. With more basil and Parmesan. It said to use quite a lot of oil and pine nuts but I left that out. Pine nuts are so high, and I love them :( still the dinner was lush! X
 
Ah never thought it would be so low shall have some soon yum! So filling! X

I know!! I've been totally craving it so good to know its low. There's loads left over too! I read you're going to WW. I used to eat gnocchi quite a bit on that as its low there too x

Great to know thanks, yeh just needing a change so will give simply filling a try and if it doesn't work out can come back to the lovely sw! X
 
I make my gnocchi from Italian SW cook book with Desiree potatoes mashed with egg and spring onion, left cold in fridge overnight. Then make tomato sauce and form into balls next day,spray with fry lite and oven bake till crispy. Serve with hex cheese.

Was just going to say I have a recipe in one of the sw books think its the around the world one, not made it yet though

Lentil and mung bean shepards pie, Cajun carrot chips and balsamic Brussels - bit of a mix match just finishing off before shopping and veg box arrives :)
