What have you just eaten??

Frittata adapted from the recipe inSW - July to what I had in the fridge. served with lettuce, tomato.

Ooh I made this today too! Really lovely! Will take for lunch with salad tomorrow! Just a bit worried that my daughter won't eat much of it and I don't want to find I have eaten it all! 10 eggs! Will have to give half to my mum to take home I think!

10 eggs?? Nora! I only ever used 5 but chuck

Really? I stuck to the recipe literally so will modify next time! Yeah 10 eggs has scared me slightly! Want to make SW quiche next

I had gotten this from another website a long time ago but it is SW Friendly bar the oil but worth it. Couple of tweaks - we usually half the recipe but I think next time we will keep the spices the same as gives a better flavour; we changed out the tin tomatoes for pasata as gives a better consistency plus used chicken breast & we browned the chicken then transferred to the slow cooker for approx 6hrs :)

[h=2]Ingredients[/h]Serves: 6

  • 1 large onion, quartered
  • 4 cloves garlic
  • 1 slice fresh root ginger
  • 1 tablespoon olive oil
  • 1 dessertspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cardamom
  • 1 cinnamon stick, broken
  • 1/4 teaspoon ground cloves
  • 2 bay leaves
  • 1/4 teaspoon ground nutmeg
  • 6 skinless chicken thighs
  • 1 (400g) tin peeled plum tomatoes, crushed



Prep: 15 mins | Cook: 2 hours
1.
Place onion, garlic and ginger in a
food
processor and process into a paste. Heat oil in a large frying pan over medium heat, add onion paste and sauté, stirring continuously, for about 10 minutes.

2.
Stir in the cumin, turmeric, salt, pepper, cardamom, cinnamon, cloves, bay leaves and nutmeg. Sauté, stirring, for 1 to 2 minutes. Place chicken pieces in frying pan and stir them around with the spice mixture until they are well coated.

3.
Sauté for another 4 minutes, then pour in the tomatoes with liquid and stir. Reduce heat to low and simmer for 1 to 2 hours, or until the oil has separated from the liquid. Stir occasionally. (Note: If you simmer uncovered, the sauce will thicken;
add water
, or keep covered while simmering.) Remove cinnamon stick and bay leaves before serving.

 
Breakfast :- 30g Dorset Cearal Simply Nutty Muesli, topped with Banana and skim milk from allowance.

I have grapes and carrot sticks and celery on my desk, I know it is a strange combination, I am making some syn free houmous tonight so I have something to dip them into!

I am not sure about the 10 eggs.... I think recipe called for 6 eggs, I also use normal pasta chunky, but now have macaroni so should be smaller, and I have managed to get the red peppers in brine. I think mine could easily had served 6/8

A huge salad with, lettuce, tomato, pepper, cucumber, celery, spring onion and onion. Some wafer thin ham and chicken and a tbsp of Branston salad cream with garlic and herbs for 2.5 syns!

I am off into the corner now to polish my halo for all the superfree I have just eaten.....:angel09:

SW chips baked in the oven in Fry Light, fried (in Fry Light) eggs and beans and a pear. Pure comfort food :D
 
Mixed Crunchy salad (tho I removed the lettuce so technically red & White cabbage, carrot, peppers), beetroot, cucumber & baby plum tomatoes.
Chicken Mug Shot with Cholula Hot Sauce to spice it up a bit!!
 
A nice chicken salad, (all crunchy stuff, no lettuce) and a satsuma. About to have a yogurt and some grapes.
