Chicken Katsu Curry, So Scrummy!


Extra Easy: FREE Add 6 Syns if not using Wholemeal bread as a Healthy Extra on Extra Easy.

I have it without rice on Original but I also add loads of spinach and broccoli

For the chicken
4 skinless chicken breasts
240g fresh wholemeal breadcrumbs
1 egg, beaten
Salt and freshly ground black pepper

For the curry sauce
1 large onion, chopped
1 courgette, chopped
2 carrots, chopped
4 cloves of garlic, crushed
1 tsp fresh ginger
1 tsp turmeric
2 tsp cumin
2 tsp coriander
1 tsp chilli powder
1 tbsp sweetener
1 tbsp soy sauce
1 litre chicken stock
1 bay leaf
1 tbsp fat free fromage frais
Low calorie cooking spray

[h=3]method[/h]1. Spray a large heavy-based saucepan with low-calorie cooking spray. Add the onion, garlic and ginger and cook for 3 minutes or until the onion is softened. Add the carrots and courgette and lightly fry for a further 4-5 minutes. Add the turmeric, cumin, coriander, chilli powder and sweetener and evenly coat the vegetables. Add the stock, soy sauce and bay leaf and bring to the boil. Reduce the heat and simmer for 30 minutes.
2. While the sauce is cooking, preheat your oven to 200°C/180°C Fan/Gas 6. Season the breadcrumbs with salt and freshly ground black pepper. Place each chicken breast in some clingfilm and flatten with a rolling pin or meat tenderiser. Remove the clingfilm and dip the chicken in the egg, then coat with breadcrumbs and place on a baking tray sprayed with low-calorie cooking spray. Bake in the oven for 15-20 minutes or until the chicken is cooked through.
3. For the sauce remove the bay leaf and pour the contents of the saucepan into a blender. Blitz until it becomes a thick, smooth sauce and stir in the fromage frais.
4. To serve slice the chicken breast into pieces, spoon over the curry sauce and serve with steamed jasmine rice.
 
Ooooh so many nice new recipies to try out :) I LOVE a good risotto especially mushroom so will defiantly be trying that one posted earlier on :)

and the katsu chicken curry sounds lush! Cant wait to try that bad boy out ;) I love the inner cook in me which has developed since joining slimming world.

This thread is amazing!!! Have taken quite a few new recipes to try from it although got to say my favourite meal atm is the SW egg fried rice (recipe in first few pages) absolutely brilliant, not as good as the Chinese but knew it wouldn't be, not going to beat the professionals lol also love that people have lots of favourites and loads of recipes have been posted as its proof that it can work if people stick to it and its always easier when there are a lot of recipes to choose from :)
 
These recipes sound delish!im going to be busy this weekend trying them out! If I'm in a hurry I make a bean chilli. Tin of: baked beans, kidney beans, butter beans, tomatoes and throw in some chilli flakes. Heat and serve.... Lovely and very very quick!!
 
I am drooling!

Think my favourite SW meal is the tri-colour carbonara pasta made with quark, cabbage, peas, tomatos and penne etc. it's amazing :)
 
New favourite as of tonight - pete's peanut curry. Yum!

Mine is the SW Donor kebab with pitta, salad, garlic mayo, garlic and mint yoghurt and SW chips, so tasty!
 
I've just had mushy pea curry for the first time, absolutely delicious and my two girls loved it too! ( I didn't tell them what was in it til they'd finished hehe)
 
I cannot wait to try some of these!! I've only been doing SW for 3 weeks but already having same meals over and over so this thread is great! Cheesecake and the simple curry are 1st on my shopping list today!
