Syn free sweet & sour....Usually I'd wait to be asked before I just posted the recipe, but I'm going out soon!!!
1 de-seeded red chilli, finely chopped (It's ok without it, but much better with!!) You could also use dried chilli flakes
1/2 inch grated fresh ginger (You could leave this out)
6 TBSP Malt vinegar
6 TBSP Sweetener
1 carton of Passata
1/2 pt chicken stock (I make it with 3 chicken Oxos)
S & P
Soy sauce (I've tried leaving it out, but it definitely needs it)
Mix the vinegar and sweetener in a small bowl.
In a large pan/frying pan put the ginger and chilli. Turn the heat on, and let them warm through (helps to release the flavour).
Add the passata to the frying pan and turn up the heat to full.
Add the vinegar/sweetener from the bowl to the frying pan.
Add the chicken stock.
Bring to the boil and then let it simmer.
Add Salt and Pepper
Add a good dash of Soy sauce.
Taste - if it needs it, add more soy.
The sauce should now be ready. If you want it thicker, boil for a little longer.
Whatever you decide to have, enjoy it...mmmm...I love chicken!!!
