I'd hold off the wheat bran until Cruise...
In attack, dairy is unlimited. In cruise, dairy is limited to 1L of which only 1/4L can be skimmed milk as a drink/liquid (in France at least!)
For the galette, you need your oatbran, some fat free fromage frais (or natural yoghurt) and an egg (some just use the white, but I like the yolk). That's the base recipe.* If you have some smoked salmon, you could serve it with that and a blob of fat free FF (If you have some caviar, it makes a fabulous Sunday breakfast!! ahem I mean the fake stuff of course!)
* then you can play with it - if you like sweet rather than savoury, add sweetener and flavourings perhaps? I go for savoury.
