Mmm Wooster - your casserole sounds yummy and I will pinch the idea when I can eat the content in a few weeks.

Tell me please - where doI find Tofu? I have looked in various supermarkets and not found it. What will it be next to? Is it a fridge kept thing or not? I want to try it.... you make it sound quite appetising.

In morrisons I saw the tofu near
the prawns and so

Most supermarkets do Cauldron tofu which is in the veggie section near the tofu. You can also get the silken tofu (mainly used for puddings) in the oriental food section. Most health food shops do it as well.

The best option though is to go to a Chinese supermarket as it seems much better quality and about a third of the price.

Glad I've got some tofu converts. Don't be put off by the appearance before you cook it though as it just looks like anaemic blancmange!

I'm going to try the silken tofu soon so be prepared for numerous more random tofu experiments. No doubt including cinammon as I seem to think that it goes with every flavour combination.
 
Wooster, I have used the silken tofu loads but more for baking as an egg replacement, would love to know what you end up doing with it.

can you make like pancakes out of tofu?
 
Yes, I've seen a few pancake recipes, and some using cottage cheese as well. They do need some sort of flour/oats but will try with the porridge packs as a substitute.

I'm try to veer away from the cheesecake recipes and trying to find something a bit healthier! Might start by putting some in my morning smoothie and see how that goes. I have got a book at home that's purely tofu recipes so I'll have a dip into that tonight. Will report back with all findings!
 
What does your smoothie consist of?
 
For smoothies I tend to use any frozen fruit and soya milk. Just blitz it and the frozen fruit makes it nice and thick. The soya milk is so low cal that a pint comes in at about 120 cals. Also great with a banana. Or the naughty version can have coconut milk! Or peanut butter of course.

Dinner tonight was bubble & squeak - sweet potato, cabbage, onion and brussel sprouts. With quorn sausages and gravy. Nice comfort food for a Saturday night in on the sofa.

My exercise has been going really well, so I've increased my food to allow enough energy. I had a one to one boxing session yesterday and felt a bit light headed after about 80 mins. For intensive exercise like that I really to ensure I've got enough fuel in the tank. Since Monday this week I've done 5 gym sessions, 90 mins kick boxing class, 90 mins boxing 1-2-1 and have got 4 hours of tennis scheduled in tomorrow. Love it!! Never had so much energy. :)
 
where do you go boxing? yeah i use soya milk or skimmed milk for my smoothies now :D
and frozen fruit you cant go wrong what fruit do you use?
 
I use the unsweetened stuff and that really keeps the calories down. I use a variety of fruit - blueberries, mango, raspberries etc. Most supermarkets have a good variety. I've been boxing at the gym near work as one of the trainers specialises in boxing. Can't wait for my next session.
 
tinned fruit or fresh in the packs?
yeah boxing is brillant i must say :D gets you really hyped :D
 
I use frozen fruit as it's a lot cheaper than fresh. Also canned fruit is sometimes in syrup or juice.

I love the boxing after just one lesson! Definitely gets the adrenaline flowing.
 
frozen fruit what section would you get that from in the supermarkets?
 
lol doh the frozen section lol, maybe ive never looked hard enough oh near the frozen desserts and ice cream yeah ill check it today :D i make some amazing smoothies now and so filling

I had a great trip to the local famr shop and got loads of lovely fruit and veg for the week. I made a tomato based caserole with aubergine, sprouts, carrots, sweet potato and lots of herbs and spices. This will keep me going for a few lunches and quick evening meals.

Pudding was rhubarb, pear and ginger compote with yoghurt.

Constantly snacking on raisins. Never liked them before but they are worringly addictive...
