I love this soup so much, I just had to share the recipe:
Serves 8. Can easily be halved but I make a big batch and freeze it.
Free on green and extra easy.
Two onions
3 sticks celery
3 cloves garlic
2 large butternut squash
3 large carrots
6 handfuls dried red lentils
Veg stock
Chop up all the veg.
Spray a large pan with frylight. Soften the onions, celery and garlic for 5-10 minutes, add a tiny splash off water if it starts to stick.
Add the carrots and squash, stir and cover. Let the veg sweat for 10 mins, stirring occasionally.
Add the red lentils and put in enough stock to just cover the veg. You can add more but I like it really thick.
Cook for 45 mins or so. Blend and enjoy!
I like mine served with SW Chips to dunk in. Also good with a blob of cottage cheese on top. Sounds weird but very tasty!
