Bombay Chicken

This is one of my favourite flavors with chicken.

(per person)

1 Skinless Chicken breast
1 tbsp mango chutney
1/2 tsp ground tumeric
1/2 tsp ground corriander
1/2 tsp ground ginger
1/2 tsp tandori powder
salt and pepper


Season both side of the chicken with salt and pepper.

Make a cut in the chicken to make a little pocket and put in the tablespoon of chutney.

Mix all the spices together in a bowl and press the chicken into them firmly on both sides to coat the chicken.

Cook on a non stick baking tray for 25 - 30 mins at 200c or gas mark six.

Serve with... some lovely rice and vegtables
