yummy recipes

toffee choc chip butterfly cakes with choc/nut filling 3.5 syns each:

75g lurpak lighest
100g self raising flour
1 tsp baking powder
3 eggs
1 tsp vanilla essence
6 tbsp sweetner
25g mini rolos chopped

for the filling
250g quark
1 tbsp sweetner
1 tbsp peanut butter
1 sachet of options - i used belg choc

mix together butter and sweetner, when smooth mix in the eggs with a little flour, then fold in the rest of the flour and baking powder add vanilla and rolos, mix well. i used silicone cases put them in oven on gas mark 4 for about 15-20 mins

filling:
mix together all ingredients for the filling, mix well to make sure peanut butter is mixed in well, i also used peanut butter flavour, which is syn free, you can get this from the cake decorating company, cut out hole in cakes and fill with the filling when cakes and cool and make into butterflies


i have made lots of diff variations of this recipe ranging from 2 - 4 sys per cake

i always use different amounts each time so the cakes work out slightly different syn values, last time i made them i think i made 18 and i used 3 mars bars and some lurpack lighest melted and 3 cakes were a healthy extra plus 6 ish syns, next time i do them i will take note of the quantities

cheese and onion pie
600g potatoes chopped, 200g carrots finely cubed, 150g green beans finely chopped, frylight, 3 large onions diced, 3 eggs, 4 sp dried parsley, 200g ff cottage cheese wi chives salt and pepper, 110g reduced fat cheddar grated, fresh parsley to garnish. ( I also added swede and topped wi halved cherry toms) preheat oven 180, boil potatoes and mash and in separate pan boil other veg and in frying pan fry off the onions, whisk the eggs parsley and cottage cheese together add all the other ingredients transfer into a frylighted Pyrex and top wi cheese, salt n pepper, tomatoes and bake for 35-40 mins!

Made these today but couldn't find mini Rolos so I used 25g chopped 70% dark chocolate and peppermint essence in the buns.

For the filling I just mixed the quark with a sachet of Mint Belgian Choc Options.

YUM YUM get to tescos all the quorn & linda mcartney products are bogof, the LM italian sausages are only a quid and still bogof! and they are very nice one of my new fave things on a green day with SW chips and spaghetti and fried egg :) x

Great minds think alike - I grabbed the sausages yesterday - also bought the Linda McCartney Mozzarella Burgers (4 syns) they are delish!
 
well the verdicts out: it was very tasty, so here's how i made it:

5 onions, sliced thinly
2 tbsp of each: balsamic vinegar, red wine vinegar, worcestershire sauce, sweetner (mix all together in a bowl or cup)
a good pinch of each: salt, black pepper and white pepper
2 tsp of mustard powder

Fry onions in frylight add salt and pepper, fry until onions start to go translucent then add the mustard powder, stir and add the vinegars, W sauce and sweetner, continue to cook until the sauce thickens. ready to eat straight away, keep in the fridge in an air tight container and this will keep for a while

Sarah - thank you for this delicious recipe - I;ve run out!! So off to make a double batch in time for tonight's dinner !
