Zero points soup

    Hi

    Is there a recipe for zero points veg soup ?

    Shove any 0 pp veg into a pan cover with stock made from 1 oxo cube and season well. Then blend.

    The oxo cube is 1pp but split into a couple of portions I don't count it!

    mexican soup:zero points

    1 onion, diced
    1 large courgette, cubed
    1 small pack sugar snap peas, cut into bitesized pieces
    1 red or green pepper diced
    2 red or green chillis, de-seeded and chopped
    1 clove garlic, crushed
    1 pint veg stock
    1 tin chopped tomatoes
    1 teaspoon cumin
    1 teaspoon oregano
    1 lime

    Throw it all in a pan together, except for the lime, cook for about 15 mins or until vege's are at a texture you like, squeeze in the lime juice and serve! The above makes up about 4-5 portions of soup and it can be frozen. Very filling, especially if you toast a tortilla wrap and serve that with it.

    My favourite at the moment, butter nut squash and sage. Chop up and de-seed a butternut squash, I throw in a chopped onion and a few cloves of garlic, veg stock boiling water just to cover, simmer for about 20 minutes, add in your sage and blend. Yum yum yum!

    weight watchers now slimming world!
    My fave soup is

    1 butternut squash, deseeded and chopped into cubes
    1 red pepper
    1 large onion
    500mls of chicken stock

    Put it all in a pan and cook til soft, blitz til smooth with the blender and then add chilli flakes/powder to taste :)
