Baked Blackberry Cheesecake - 105 calories per serving

    Baked Blackberry Cheesecake
    Serves 4
    105 cals per serving

    175g cottage cheese
    150g low fat natural yoghurt
    15ml/1tbsp wholemeal flour
    25g golden caster sugar
    1 egg
    1 egg white
    rind and juice of 1 lemon
    200g blackberries (can use fresh or frozen but has to be the fruit variety, not the phone :p)

    1.Preheat oven to 180C/350F/Gas Mark 4. Lightly grease an line a 18cm sandwich tin

    2. Put cottage cheese in a food processor and process until smooth or you can just push through a sieve if you doesn't have a food processor

    3. Add the yoghurt, flour, sugar, egg, egg white and mix it all together. Add the lemon rind and juice and the blackberries, or whatever fruit you're using

    4. Tip the mixture into the sandwich tin and back for 30-35 minutes until it's set. Turn the oven off and leave it for another 30 minutes

    You could use blueberries in this too, have done before, love blueberries!! Could probably use strawberries too, mmmm! Frozen blackberries etc are usually a lot cheaper. Can get mixed summer fruit frozen bags quite cheap
